Garbage Salad Recipe

Spring and Summer are the perfect time for salads. The cool, refreshing crunch of a great salad at lunchtime, or as a dinner side just tastes SO GOOD during the warmer months.

But let’s face it, the same old greens with the usual suspects (carrots and cherry tomatoes) can get BORING….. Let me tell you, there is nothing boring about this Garbage Salad.

The name Garbage Salad Recipe may not sound all that appetizing, but all it really means is that this salad has absolutely everything dumped into it: two kinds of lettuce, meat, cheese, and lots of embellishments.

Top it all off with my Copycat Olive Garden Dressing, and it’s a meal all by itself-one you can actually enjoy and feel good about. Because “less” shouldn’t have to mean “no fun.”

Garbage Salad Recipe

Ingredients:

  • 3 cups Iceberg lettuce, chopped
  • 3 cups Romaine lettuce, chopped
  • 4 slices of provolone cheese, cut into strips,
  • 4 slices of hard salami, cut into strips
  • 1 cup of croutons
  • 1/2 cup artichoke hearts, drained and roughly chopped
  • 1/4 cup of red onion, cut into thin slices,
  • 1/3 cup of black olives,
  • 1/3 cup peperoncini
  • Italian dressing or vinaigrette, OR my Copycat Olive Garden dressing.
  1. Gently mix together ingredients and drizzle dressing over salad. Toss until salad is evenly coated.

Ingredients
 

  • 3 cups Iceberg lettuce chopped

Instructions

  2. I had never heard of garbage salad until my friend mentioned it. I googled, and found this recipe. It sounds delicious!!! I am going to swap out the salami for some meatless (faux) lunch meat for extra goodness, and go to town!!! Pinning
