You guys know how much I love my EasyLunchBoxes (affiliate link) They’re great for packed lunches, because they include a variety of foods to keep your taste buds interested. (Much more exciting than the same old sandwich-fruit-cookie combo every day.) And they make it easy to pack on the go snacks as well.

But did you know you can also use these little boxes for breakfast?

It’s true! You can make an easy to-go breakfast by filling up the box with portable breakfast foods. I made this one with strawberries and blueberries, cottage cheese, hardboiled eggs, and a mix of almonds and Craisins.

You could do the same thing with any combo of fresh fruit, dried fruit, and nuts that your family likes. You can even pack up your breakfast the night before – so all you have to do is grab it and go.

  1. What could I use in place of the nuts? I am a teacher at a nut free school.

    1. Cheese, garbanzo beans or baked tofu would be great subs.
