Lemon Salmon Kabobs
One food that doctors are always telling you to eat more of is fatty fish, like salmon. It’s full of protein, vitamin D, and those healthy fats that do such great things for your heart.
So why aren’t we already eating it all the time? Because frankly, a lot of people just don’t like fish. Or at least, they think they don’t like fish. Let’s face it, if your idea of fish is a bland slab covered with bread crumbs in a box in the freezer, that’s nothing to get excited about.
What we need here is a way to make fish more appealing. Something light and flavorful that’s exactly the opposite of those frozen blobs.

And here it is: Lemon Salmon Kabobs. Chunks of fresh salmon, threaded on skewers with fresh lemon slices, drizzled with olive oil, seasoned with salt and pepper, and grilled to tender perfection. (If you just can’t wait until grilling season to try this, a grill pan on your stove can do the same job.)
You can eat the salmon and the lemon together, or just pull the chunks off the skewers and squeeze the lemon juice on top. Add green salad and rice or couscous to make a complete, healthy meal.
Lemon Salmon Kabobs
INGREDIENTS:
6- 8 grilling skewers (wooden or metal)
2 lbs fresh salmon
4 large lemons
fresh dill
olive oil
Kosher salt and freshly ground black pepper
DIRECTIONS:
1. NOTE: If using wooden skewers, soak them in water for at least and hour.
2. Heat your grill or grill pan to medium high heat. Cut your salmon into 1 inch cubes and slice 3 of the lemons into very thin slices.
3. Alternate threading salmon and the lemon slices on your skewers.
4. Drizzle the skewers with olive oil and season with salt and pepper. Repeat to fill up the rest of your skewers.
6. Carefully transfer the salmon skewers to the preheated grill or grill pan and grill for about 3-4 minutes per side or until the salmon is fully cooked. Remove the salmon skewers from the grill and let rest for about 5 minutes.
