It’s not that there’s anything wrong with meatloaf. In fact, there’s a lot that’s right with it. It stretches your budget by combining cheap ground beef with onion and bread crumbs, and it’s a satisfying meal that the whole family will eat. But it’s just kind of – plain. No one minds it, but no one gets excited over it.

But what if you want to get all these perks, and you don’t want your family to look bored? Why, you dress the meatloaf up, of course. You glaze it, or make it into cupcakes – or hide a surprise in the middle.

Mac and Cheese Stuffed Meatloaf Recipe - Family Fresh Meals

The surprise in this meatloaf is a simple stuffing made from boxed macaroni and cheese. You fix it according to the directions on the package, then spoon it into a hollow in the ground beef mixture and top it with a little extra cheddar and mozzarella. Then mold the rest of the beef mixture over top before baking it.

When this comes out of the oven, it looks just like any other meatloaf. But when you slice into it and all that golden, creamy mac and cheese spills out, I promise you, no one will look bored.

Mac and Cheese Stuffed Meatloaf

Ingredients:

2lb extra lean ground beef
1/4 cup bread crumbs
2 eggs
1/4 cup diced onion
2 tsp garlic powder
1 TB dried parsly
1 tsp salt
1/2 tsp pepper
3 TB A1 sauce
1/4 cup ketchup
1/3 cup BBQ Sauce

Mac & Cheese Stuffing:
1 box of prepared macaroni and cheese (or 3 cups of my Crockpot or Instant Pot Mac and Cheese)
1/2 cup mozzarella cheese
1/2 cup sharp cheddar cheese

Topping:
1/3 cup ketchup
2 TB Brown sugar
1 teaspoon Worcestershire sauce
Instructions

Directions:

1. Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil. Spray with non-stick spray then set aside.
2. Combine the lean ground beef, breadcrumbs, eggs, onion, garlic powder, parsley, salt, pepper A1 , ketchup and bbq sauce in a large bowl. Mix until fully combined.

3. Take half the meatloaf mixture and place on the baking sheet. Form an oval shape with a cavity in the middle of the loaf, about 8 inches long and 3-4 inches wide.

4. Mix together prepared mac and cheese and mozzarella and cheddar cheese.

5. Place mac and cheese mixture into the cavity.

6. Use the remaining meat mixture and top the loaf, enclosing the mac and cheese.

6. Combine the topping ingredients and then brush it over the top of the meatloaf. Place meatloaf back into the oven for 10 more minutes.

Ingredients

  1. This is just fat man loving right here. Added bacon to the mix of mac before loading the loaf, whew whole new level. P.S. use good bacon.

  2. It ended up great except the Mac n cheese was a little over cooked. Should I have undercooked it in the initial cooking?

  3. I haven’t made this yet but will give it a try. Am a lifelong hater of meatloaf but this variation is enough to pique my interest!
