Mediterranean Lunch Snack Box
On-the-go snack boxes are handy for all kinds of situations – sports practice, after-school activities, and any kind of car trip. You can even take one to the mall if you want to avoid the junk they sell at the food court.
But when you’re taking snack boxes to all these different places, you can start to get tired of your usual snacks. Cheese and crackers and nuts and fruit are all great, but after a while, you want to mix things up a bit.

This Mediterranean Lunch Snack Box is a great way to do that. It’s got a flavorful tomato, chickpea, and feta salad that will definitely wake up your taste buds – and some pita wedges to eat it with, because who wants to mess with utensils? And to complete the Middle Eastern theme, there are some cool cucumber slices, with hummus for dipping.
Pack one of these on your next trip, and it can be a vacation for your taste buds as well.
Here is what I used to make our healthy snack boxes!
Mediterranean Lunch Snack Box
Lunchbox Container: EasyLunchboxes
- 1 cup chickpeas
- 1 cup diced tomatoes
- 1/4 cup feta
- 3 tbsp Italian Dressing
- 1 cucumber, sliced
- 1 cup hummus
- 2 whole pittas, cut into triangles
Directions:
- In a medium mixing bowl, mix together chickpeas, tomatoes feta cheese and dressing.
- Place your ingredients into your EasyLunchboxes (affiliate link). Cover and refrigerate until ready to use. Use within 3 days.
