No Bake Butterfinger Pie
Ever notice how a lot of the best desserts start with a great candy? Like my Andes Mint Brownie Bites, or my Candy Corn Sugar Cookie Recipe for Halloween. Or my Easy Candy Bar Poke Cake, which can use whatever candy you like best.
So when I started thinking about new dessert recipes, it was a natural jumping-off place to start thinking about new kinds of candy that I could turn into a dessert. And it only took a few minutes to hit on a great candy that I’d never used before: Butterfinger bars. So crunchy, chocolatey, and peanut-buttery-sweet. They were just crying out to be crushed up as part of a creamy pie filling.
Once I had the idea, putting it all together was a snap. I made a filling kind of like one of my sweet dips, with sweetened cream cheese, peanut butter, whipped topping, and chopped Butterfingers. Then I just spread it in a pie crust, topped it with a little more candy and a drizzle of chocolate, and popped it in the freezer to chill.
Because there’s no oven needed, this no bake pie is a great dessert to make with kids – or to eat with them. Or with anyone else who likes Butterfingers, which is everybody, right?

TOOLS USED FOR THIS NO BAKE BUTTERFINGER PIE
Pie Crust: Here is the yummy crust!
Mixing Bowls: These bowls are pre-heated oven, microwave, fridge and freezer safe, and dishwasher safe.
Hand Mixer: Here is my trusty hand mixer.
Can you chill the pie for longer than two hours?
Yes! It needs to stay in the freezer at least two hours, but it will set even better overnight. In fact, you can make it up to two days in advance and serve it ice-cold out of the freezer.
Can you make it with real whipped cream instead of Cool Whip?
You can, but it’s a bit more work. Use one cup of heavy whipping cream and whip it with an electric mixer until stiff peaks form. Then fold it into the cream cheese-peanut butter mixture. Make sure to chill the cream well ahead of time so it whips better.
Do Butterfinger bars contain gluten? How can I make this recipe gluten free?
They don’t, but the Oreo cookie crust in this recipe does. However, you can make the recipe gluten-free by making your own cookie crust from your favorite crunchy gluten-free cookie. Crush up about 6 ounces of the cookies into fine crumbs in your food processor, or put them into a zip-top bag and run over them with a rolling pin. Then measure out around 1 2/3 cups of crumbs into a bowl and mix in a quarter-cup of melted butter and three tablespoons of sugar. Press the mixture evenly into the inside of your pie pan and chill it until it’s set.
