We’ve all heard it – the siren song of the fast-food drive-through.
You try so hard to be strong. But then you hear the words “bacon cheeseburger” and suddenly you can almost taste it…the juicy, chewy beef…the cheese melting on top…the crisp, salty bacon. And somehow you just find your hands turning the steering wheel in the direction of the nearest drive-through before you can stop them.
But there is a way to escape. The next time you hear that siren call, keep turning that wheel, and steer yourself to the grocery store to pick up the ingredients for this One Pot Bacon Cheeseburger Casserole. Actually, you probably have most of them at home already, so you might not need to buy anything but the beef.
This dish has all the delicious flavors of a bacon cheeseburger -the meat, the cheese, the bacon, and all the toppings you love. But they’re spread out with pasta and veggies (tomato and onion), which makes the casserole version a lot easier on your waistline. Not to mention your wallet.
And the casserole comes together really quickly, too. All you have to do is fry the beef, onion, and garlic, then add the other ingredients and let it cook for about 15 minutes. Stir in the cheese, add your favorite toppings, and you’re ready to go.
It’s not quite as fast as going through the drive-through. But at least you don’t have to talk to a big plastic clown face to get it.

One Pot Bacon Cheeseburger Casserole
INGREDIENTS
butter
yellow onion
garlic
lean ground beef
season salt
Worcestershire sauce
caned diced tomatoes
tomato sauce
chicken broth
ketchup
yellow mustard
uncooked rotini pasta
shredded cheddar cheese
bacon
salt to taste
OPTIONAL TOPPINGS
Freshly diced tomato
Pickles
shredded cheese
DIRECTIONS
- In a large pot, over a medium heat, saute onion and garlic in butter until softened. Add ground beef into the pot and season with seasoning salt and Worcestershire sauce. Cook over a medium-high heat until beef is browned. Drain excess liquid or fat if there is any.
- Next add in canned tomatoes, tomato sauce, chicken broth, water, ketchup, mustard, pasta and additional 1/2 teaspoon of season salt to the pot and bring mixture to a boil. Reduce to a simmer, cover and cook for 10 -15 minutes, stirring occasionally. Once pasta is tender, remove from heat and stir in one cup of shredded cheese.
- Top with remaining cup of cheese, bacon, diced pickles and freshly diced tomatoes. NOTE: To get the cheese to melt on the top at the end, you can recover with lid and cheese should melt right away.

- 1 pounds lean ground beef
- 2 teaspoon of season salt
- 1 Tablespoon Worcestershire sauce
- 2 14.5 oz cans diced tomatoes, drained
- 1 8 oz can of tomato sauce
- 2 cups of chicken broth
- 2 cups of water
- ¼ cup of ketchup
- 1 tablespoon of yellow mustard
- 3 cups uncooked rotini pasta
- 2 cups of shredded cheddar cheese divided
- 5 slices of bacon cooked diced, divided
- salt to taste
Optional topping
- Freshly diced tomato
- Pickles
- shredded cheese

Hubby is allergic to onions and doesn’t care for raw tomato chunks. Will it have a major impact on the flavor if those are left out?

Just made this. Used gluten free rotund. Goofed and bought crushed tomatoes so couldn’t drain. So left out half cup water. Didn’t take time to add bacon or top with tomatoes and pickles. IT IS WONDERFUL. Mine is soupy or really saucy because I goofed but I like it that way. Thanks for the recipe.
