One Pot Cheesy Chicken Monterey

1 Tbsp. olive oil
1 lb. boneless, skinless chicken breasts, thinly sliced
1 package Knorr® Rice Sides™ – Chicken flavor
1 can (15.5 oz.) no-salt added black beans, rinsed and drained
1 cup frozen corn kernels, thawed
1 Tbsp. chopped jalapeno pepper
1/2 cup shredded reduced fat Monterey Jack cheese

Directions:

1. HEAT oil in large nonstick skillet over medium-high heat and cook chicken, stirring frequently, until chicken is thoroughly cooked, about 4 minutes. Remove; cover to keep warm and set aside.One Pot Cheesy Chicken Monterey - Cook chicken in a pan

Ingredients

  2. I may be wrong, but one serving must be pretty small, since Knorr Rice Sides contain a lot of sodium, which isn’t reflected in the Nutr. Info. per serving here. What is the size of 1 serving? This DOES sound good!

    1. Hi Angelina! This recipe was provided by Knorr, and stated 4 servings. I would just divide it into 4 equal portions. As far as the sodium goes, the entire package of Knorr rice only serves 2.5 people, so you aren’t getting an entire serving of the rice, so it will be a little bit lower than a full serving of the rice. I hope that helps.
