For a start, you can swap out the meatballs for delicious smoked sausage. This makes the meal even faster because the sausage is already cooked, so all you have to do is brown it. With some onions, of course, because everything goes better with browned onions.

Next, you can trade in the plain tomato sauce for a can of fire roasted tomatoes, stretched out with some chicken broth and milk. And to amp up the flavor even more, stir in some cheddar cheese and green onions.

One Pot Cheesy Pasta and Sausage

Ingredients

8 oz. box Penne Pasta
16 oz. pkg. Smoked Sausage, sliced
1 (14 oz) Can Fire Roasted Tomatoes
2 Cups Chicken Broth
2 Cups Shredded Cheddar Cheese
½ Cup Milk
3 Green Onions, diced and divided
2 Tablespoons vegetable oil

Directions

1. In a large pot over medium heat, add the oil, sausage, and 2 of the onions for about 5-6 minutes until lightly browned.

2. Add the tomatoes, chicken broth, milk, and pasta. Stir together.

3. Bring this to a boil, turn down and let simmer for 15 minutes. Remove from heat and stir in cheese.

4. Serve with the extra green onion for a garnish.

    Love this recipe! I was craving something from a restaurant the first day I made this and it was so delicious and easy it felt pretty much the same. I’ve also tried it with Italian sausage and mozzarella and it is super good with those changes as well. Thanks for sharing
