Crockpot Irish Stew

Crockpot Irish Stew served in a white bowlTwo days left until St. Patrick’s Day, and I have another EASY recipe for you to try out.  Crockpot Irish Stew!

I found a couple stews online for St. Patrick’s Day, involving potatoes and cabbage. I really wanted to make this stew last night and didn’t have those things on hand, so I decided to tweak a couple ingredients and came up with this beauty.

My pour veggie Darryl was left out of this dinner, but the girls and I LOVED it. I chopped up the veggies the night before, and then in the morning, dumped everything into the crockpot, and pushed GO! So very simple!

Hope you enjoy this yummy Crockpot Irish Stew !

Eating now! Yummy! Not sure what makes it Irish and seems more like beef barley soup than a stew, well at least mine does, lol, still great! Thanks you so much for the recipe!

  2. Hi Corey:

Would you please help me solve this mystery? I followed the directions exactly. My stew is very watery like a soup, not like the delicious stew in your picture. Is it because I used a 4qt crock pot and not a 6qt?

Any help would be greatly appreciated.

    1. Every crockpot cooks a little differently Patricia. The size of the crockpot might have been the issue. If you would like to thicken up your soup, you could add in a little flour/water mixture, or try simmering it on the stove for a little bit.

I had so many of these ingredients in my fridge/pantry about to go bad, so, I was so excited when I saw this recipe. I just started it now. I agree with the above commenter, mine, initially, looks really soupy. Now I’ve just started the crock pot so maybe the liquid will cook off but I’m wondering could you add a little more barley to thicken it up?? Here’s hoping mine isn’t as good as yours looks…..and hopefully the kiddos love it too! ?

    1. Meant to say….”is” as good as yours looks! Hahahaha

  4. I think I will try this with lamb stew meat.

I have made this Irish Stew every St. Patrick’s Day for over 10 years. (My first comment from long ago is below!) It’s become a family tradition… we love it so much! Thanks for keeping up the recipe all these years. I thought I had it memorized but I came back today to find I’ve been forgetting the tomato sauce for a few years now. Hahaha!

    1. You are the sweetest! I am so happy my recipe gets to join your family tradition! Thank you so much for the sweet comment!
