White Chocolate Cracker Toffee
Well, folks, the holidays are right around the corner. It’s time to start making our lists and checking them twice, trying to find that perfect gift for every friend and relative.
Now, if you’re like me, you’ve got a few people on that list who are really hard to buy for. There’s nothing they want that they don’t already have. And if you ask what they’d like, they just shrug and say, “Oh, you don’t need to get me anything.” Come on, what fun is that?
The best solution I’ve found is an edible gift. Because no matter how full their homes and closets already are, everyone has to eat – and everyone likes to indulge a little during the holidays.

So this year, all the hard-to-please folks on my list are getting this homemade White Chocolate Holiday Cracker Toffee. It’s super simple – just a base of saltine crackers topped with melted butter, brown sugar, white chocolate, and holiday sprinkles – but it’s also amazingly addictive. Even the pickiest folks on your list won’t turn up their noses at it.
And the great thing is, since it all gets gobbled up before New Year’s, you can always give them the same thing for next year’s present. I promise you, no one will complain.
White Chocolate Cracker Toffee
1 stick butter
1 cup packed brown sugar
1 tsp vanilla extract
1 sleeve saltine crackers
1 cup white chocolate chips
⅓ cup crushed candy canes
Festive sprinkles
1. Lay out crackers in an even layer on a buttered baking sheet. Melt butter, brown sugar, and vanilla together over medium heat, stirring frequently for 10-15 minutes. NOTE: Make sure your mixture gets thick and bubbly – it won’t harden if not.
2. Pour your mixture over your saltine crackers, and spread over any blank spots.
3. Sprinkle white chocolate chips all over the surface, and let them sit for 5 minutes or until they get shiny. (the heat from the toffee with soften them) Then, spread them gently with a spatula to cover your surface. Sprinkle with crushed candy canes and sprinkles.
4. Refrigerate for 30 minutes or let sit at room temperature for 2 hours to cool and harden. Break with hands or a knife into pieces and serve.

This stores well in an air-tight container for about 1-2 weeks or in the freezer for a month or two.
