Pop quiz time: have you ever eaten a grinder? If you said yes, you’re probably from New England. See, a grinder is a type of submarine sandwich that’s a specialty in the northeast. It’s not just any sub: it’s a hot sub with loads of meat and cheese.

You can make a grinder with any kind of meat: chicken, pastrami, meatballs, whatever you like. But me, I figure, why limit yourself to just one kind? So this Cheesy Meat Grinder Stuffed Bread has three kinds of meat, plus two kinds of cheese, plus two kinds of peppers, plus Italian seasoning. Because less isn’t more: more is more.

The only problem with stuffing all this into one sandwich is getting it to fit on the roll without spilling out. So I’ve given this grinder the same stuffed-bread treatment as my BBQ Stuffed Chicken Bread. You hollow out the loaf, load it up with the fillings, and then bake it, so the cheese melts and kind of glues the whole thing together. That way, you can cut it into slices and eat it with no mess.

Sliced and served hot from the oven, with peppers on top, this is a whole party’s worth of sandwich in one loaf.

Cheesy Meat Grinder Stuffed Bread

INGREDIENTS:

1 large french bread loaf
8 – 12 slices salami
8 – 12 slices smoked turkey
8 – 12 slices honey ham
8 – 10 slices provolone
1 ½ – 2 cups shredded mozzarella
2 Tablespoons butter
1 teaspoon Italian herbs
¼ red pepper, diced small
pickled banana peppers, as desired

DIRECTIONS:

  1. Preheat oven to 350 degrees F. With a sharp knife, carefully cut a hollow out of the top of the bread loaf. Remove the crust and tear more bread away from the inside, leaving a 1” margin on the inside of the bread loaf.   2. Begin by layering the meat and cheese. Simply roll each slice of meat in a loose cigar shape and lay down the length of the bread bowl.
  3. With the cheese, just lay it down without folding it, over the top of the meat. Alternate each layer, so first salami, then cheese, then ham, then cheese, then smoked turkey as the last layer.
