Brown Sugar Honey Glazed Carrots

After starting to glaze my carrots with honey and brown sugar, I don’t think I’ll ever be able to go back to plain roasted or cooked carrots again!

These Brown Sugar Honey Glazed Carrots are a real treat to be added to most main meals and are incredibly effortless to make. From a simple vegetable that’s in most of our homes, you can turn ordinary carrots into a mouth-watering side dish.  I’ve even been known to snack on them as is – you’ll soon see why!

Brown Sugar Honey Glazed Carrots

Recipe Notes:

  • Keep any leftover honey glazed carrots for veggie soups, chowders or stews that you plan on making within the next 2 days. 
  • Wash your carrots thoroughly prior to cooking. I prefer to peel my carrots before cutting them than leaving their skin on – it adds to that soft, melt-in-your-mouth texture!
  • To spruce up your brown sugar honey glazed carrots, make use of rainbow-colored carrots. It creates a rather pretty display. 
  • To meal prep, you could either buy pre-cut carrots from your local store or cut your carrots the day before, storing them in an airtight container in your refrigerator. 
  • You can use full-sized carrots or baby carrots. If you opt for baby carrots and don’t cut them, just take note that they will require some additional cooking time to get them soft and tender. 
Can I make these Brown Sugar Honey Glazed Carrots ahead of time?

If you want to make these glazed carrots ahead of time, I’d suggest doing so a maximum of 2 days prior and storing them in your refrigerator in an airtight container. They can then be heated up in the oven or in your microwave.

I wouldn’t recommend keeping these honey glazed carrots for any longer than 2 days in the refrigerator (and certainly not to be stored in your freezer) as they are likely to become soft and mushy after an extended period of storage or through thawing if frozen.

  1. Melt butter in a large skillet over medium high heat.  Add carrots and garlic and cook for 7 minutes, stirring frequently.sliced carrots in a pan
  2. While carrots are cooking, in a medium bowl, combine brown sugar, honey, salt, pepper, cinnamon, and nutmeg.  Mixture will be sticky. brown sugar mixture in small bowl
  3. Add mixture to carrots in skillet and stir to coat.  Continue cooking for 10 more minutes or until carrots are tender crisp. carrots cooking in pan

Ingredients
 

  • 3 pounds carrots cut in ½” pieces (about 6 cups)
  • cup butter
  • 2 cloves garlic minced
  • ¼ cup brown sugar packed
  • 2 tablespoons honey
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground pepper
  • ¼ teaspoon cinnamon
  • dash of nutmeg
  • chopped parsley for garnish

Instructions

  • Melt butter in a large skillet over medium high heat. Add carrots and garlic and cook for 7 minutes, stirring frequently.

  1. I don’t like carrots but would love them in this recipe. just wanted to ask if the carrots would be soft enough or should i boil them first for a few minutes before puttng them in the skillet
