Soft and Chewy, always.
Have you ever had a crispy treat that was dry and crunchy? It’s the worst, right?!
Growing up, my mom made these treats all they time…and guess what? They were ALWAYS soft and chewy rice cripsy treats. Her secret? BUTTER. The extra butter in these bars will leave you with the always coveted chewy treat. For holidays, have fun cutting these treats into different shapes and or add colorful food sprinkles for the occasion. Because these treats stay soft, it is a cinch to cut them out with cookie cutters.
QUICK TIP: If you don’t have Rice Krispy cereal on hand, any rice cereal works great!
Always Soft and Chewy Rice Crispy Treats
- 8 tablespoons butter (cut into 1 TBSP tabs)
- 1 package (10 oz) marshmallows
- 1/4 tsp vanilla
- 6 cups rice Krispies cereal
- Optional: 2-3 Tablespoons colorful sprinkles
- Place marshmallows, butter and vanilla in a large microwave safe bowl. Microwave on HIGH for 1 minute at a time, stirring in between minutes, until mixture is melted and smooth.
- Slowly mix in rice cereal until well coated.
- (Note: this is also the time to add in colorful sprinkles if you are doing so.)
- Prepare a 13 x 9 baking dish with parchment paper, and spread mixture. Because these are uber soft and chewy treats, you need to let them cool for at least 45-60 minutes.
- Cut into fun shapes or about 3inch by 3inch squares to make about 10 servings.

These look so yummy!
KaCee says
My crispy treats are always dry, so I will have to use more butter! Thanks for sharing!
Buddy B says
Use sweetened condensed milk. That will make them chewy and keep them softer longer!
Sugar Pop says
Can you share how you added this? Did you omit something?
B. Whitney says
I made these today, and they were a hit! — Just as soft and chewy as promised (and very unlike the crunchy, hard as a rock batch I made last time). And, I love how easy clean up was compared to past recipes I’ve used. Thank you for sharing this recipe! This will be the recipe I use from now one. 🙂
Corey says
So happy you loved it! It’s a fam favorite over here for sure!
Kim Sobocinski says
Do I let them cool and then cut out with cookie cutter??
Corey says
Yes, let these cool before cutting 🙂

First I just wanted to say that I made these yesterday and they are so AMAZING! They had great flavor to them, without it being and overpowering taste of sweetness. They are perfect! Also, as the recipe title states, they are and do stay soft and chewy. Second, I have a question to ask. My question is, would it be ok to add more marshmallow to this recipe to increase that flavor? If so, how much would you recommend I add?
Amanda Scott says
I just tried really good the way I like then thank you
Jill Marlow says
do they have to be refrigerated?
chantal says
This may be a silly question, Can you just melt everything in a sauce pot on the stove instead of in the microwave? I assume it wouldn’t make a difference.
Corey says
Not silly at all. Stove top works just as great!
Tiffany says
Can’t wait to try! Question, how long do you think these will keep and stay soft and chewy? If I put them in a airtight container can I get away with like 3-4 days? Need them for a party. Thanks!
Corey says
Yes! In an airtight container, 3-4 days will not be a problem at all. They should still should be nice and soft and chewy for you!
Wendy Otten says
Can I use food coloring and if so how much? Also are the marshmallows miniature?
Vickie says
I used your recipe to make a wedding cake for my friend and they loved it. It lasted a week and still Chewy inside! Thank you so much.
Sarah says
You are right. These are the best. Every time. I switch two cups of rice for two cups of fruity pebbles. Sooo good. Try it if you haven’t. The perfect Easter treat twist!
Corey says
That sounds like a yummy idea!
Jessie G says
My first time making rice crispy squares! The sprinkles looked like freeze-dried strawberries, so I added some crushed ones in and the flavour was amazing!! Soft and chewy just like promised! So easy, my 6-year-old son can make these. Recipe bookmarked! Bravo.
Corey says
Awesome! I am so happy you loved the recipe. It is one of our favorites too!
Sam says
These were amazing! I’d only made rice Krispy treats once before and they were hard and not that good. But it was so difficult not to eat all of these in one sitting! I browned the butter a little before mixing in the marshmallows and added an extra cup of marshmallows when mixing in the cereal and they were delicious!
margie says
At last rice krispies treats that are not dry. Delicious
Maygen says
I love this recipe but instead of rice crispy cereal I used fruity pebbles <3 definitely making again
Gerbie says
I want to try these for Valentine’s Day. Can I add strawberry jello powder for a strawberry flavor? If possible, how much would you recommend and when would you add it?
Thank you in advance!
Corey says
I have never tried adding jello powder! What a yummy idea. I would use the 1.5oz small box, and add most of it to the melted marshmallows. I hope that helps! Let us know how they turn out 🙂

Butter. What kind of butter? Salted, not salted? Real butter, I can’t believe it’s not butter, what butter?
Corey says
I like to use salted butter, but many people like to use unsalted. Haven’t tried this recipe with I Can’t Believe It’s Not Butter, but it might work. This recipe is pretty versatile as far as butter and add -ins such as sprinkles. 🙂
Z says
Made these today with my kids. This was my second attempt at these delicious treats. I’m SO glad I came across this recipe because it’s perfect! The softness and chewy texture was great! Will definitely be using this recipe again! I read one of the comment questions regarding whether to use salted vs. unsalted butter. I never have salted butter at home, but picked some up for this recipe. I’m assuming the salted butter may dampen the sweetness a touch? So delicious. Thank you for this recipe!
Corey says
So happy you loved the recipe 🙂 It’s one of our faves!
