The Best Crockpot Beef Stew

Beef stew has to be one of my ultimate comfort foods, especially during the winter months. And what goes better with Sunday football than a big ole’ bowl of beef stew!
Now, this isn’t any old stew. This has been proclaimed as The Best Crockpot Beef Stew by my friends and family. So add this recipe to your menu next week and let the compliments roll in.

The Best Crockpot Beef Stew
- 2 pounds beef stew meat, (cut into bite-sized pieces)
- 1 tsp Salt
- 1 tsp pepper
- 1 medium onion, finely chopped
- 2 celery ribs, sliced
- 2-3 cloves of garlic, minced
- 6 oz can tomato paste
- 32 oz beef broth
- 2 Tablespoons Worcestershire sauce
- 2 cups baby carrots carrots
- 4-5 small red potatoes, cut into bite-sized pieces (about 3 cups)
- 1 tablespoon dried parsley
- 1 teaspoon oregano
- 1 cups frozen peas
- 1 cup frozen corn
- 1/4 cup flour
- 1/4 cup water
- Combine beef, celery, carrots, red onion, potatoes, salt, pepper, garlic, parsley, oregano, Worcestershire sauce, beef broth, and tomato paste in the crock pot. I used a 6 qt crockpot for this stew. Cook on LOW for 10 hours or on HIGH for 6-7 hours.
- About 30 minutes before serving, mix the flour and the water together in a small dish and pour into the crockpot. Mix until well combined. This will add a nice thickness to the stew. Next add in your frozen peas and corn. Continue cooking covered for 30 minutes.

I liked this recipe until I added the flour and water for ‘thickness.’ Totally changed the taste. I would do it again but omit the flour and water or use far less than what was stated.
What a rescue! After arriving home from a road trip we received a call in the evening that friends were coming over next morning. What to prepare? Found your beef stew recipe by first site I saw and the best part? I had all the ingredients. It has cooked all night. Mm mm smells wonderful. I followed all the steps and tasted it this morning! Soooo delish. Hope I leave some for our visitors! ☺️ So pleased to have found this wonderful site!

You should tell people of they don’t like tomatoey things, obviously don’t add tomato paste. Lol I don’t like it and it was obvious to me to not add it, just gonna use more beef broth in place of it. I’m gonna use drained canned whole kernel corn and drained canned peas. I’m making this tomorrow for Halloween for pre and post trick or treating. My two kids like my beef stew and my husband thinks it’s okay, but this recipe may actually blow them away. I’ve never made beef stew in a crock pot but I’ve had it before, and your recipe sounds perfect. Thank you for posting this, I was seriously glad to come across it.
In all honesty, your really cannot taste the tomato paste, and it does add a dimension of flavor. 🙂
I don’t really like tomatoes themselves, though I do like ketchup and tomato soup… But you really can’t taste the tomato in this recipe (it’s so little compared to all the other ingredients) and as Corey says, it really does add a dimension of flavor.
