Caesar Salad Bacon Cups
When you have a busy life, it’s tough to get enough veggies. You want to have salad for lunch every day, but the problem is, it’s just not a meal you can eat on the go. If you try to run around with a bowl in one hand and a fork in the other, stuffing bites of lettuce in your mouth while you work, you’ll just end up with dressing all over yourself. So instead, you end up grabbing a sandwich or a burrito or something you can hold in one hand.
But what if salad could be a one-hand meal? Now it can…with bacon cups! And bacon really is the best part of a salad…. right?
What’s a bacon cup, you ask? Simple: it’s a little bowl made from strips of bacon draped over a muffin tin and baked. So instead of putting bacon bits in your salad, you can put the salad into the bacon.
Making bacon this way is healthier than frying it, because the fat cooks off and can be drained out of the bowls before you fill them. You can prepare the little bacon cups ahead of time, then fill them with salad when lunchtime rolls around. And presto – With these Caesar Salad Bacon Cups, you have a salad lunch that fits into one hand. So now, you can eat your veggies without having to slow yourself down.

Caesar Salad Bacon Cups
INGREDIENTS:
1 pkg. Center Cut Bacon
1 pkg. Romaine Lettuce Mix
3/4 cup Caesar Salad Dressing
1/2 cup Parmesan Cheese, Shredded or grated (I used both 1/4 cup each)
1 cup croutons
DIRECTIONS:
1. Preheat oven to 400 degrees F. Turn a standard cupcake pan, upside down and cover the back side of it with foil.
2. Cut 6 pieces of bacon in half and layer 2 pieces in an “X” shape over each tin. Next take a whole piece of bacon and wrap around the tin, weaving under and over the other pieces. Make sure the two ends of the bacon overlap.
3. Bake for about 15-18 minutes, or until bacon is cooked through. Remove from oven and let rest for about 15 minutes, until sturdy and holds it’s form.
4. Now let’s prepare the salad. In a large, toss together lettuce, dressing, cheese and croutons.
5. Gently remove each bacon cup from the pan. Fill each bacon cup with salad mix.
