Eggs, bacon, biscuits and cheese, OH MY!
Some mornings I wake up feeling like eggs, No. Make that bacon…wait, biscuits sure do sound good. Did someone say cheesy?
Throw all those ideas into a baking dish, and you have a perfect go-to breakfast for the weekends. Most of these ingredients are probably sitting in your fridge right now!
Sooooooo. What are you waiting for?
Cheesy Biscuit Breakfast Casserole
- 12 oz tube of refrigerated biscuits
- 4 eggs
- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- 2 Tablespoons grated Parmesan cheese
- 1/2 Tablespoon all purpose seasoning ( such as Mrs. Dash)
- 1/4 teaspoon of salt
- 1 Tablespoon butter
- 5 slices of bacon, cooked and diced
- Preheat oven for 375 degrees. In the mean time, scramble 4 eggs with your 1 Tablespoon of butter and salt. Set aside.
- In a large bowl, mix together scrambled eggs, Parmesan cheese and all purpose seasoning.
- Next, prepare a 9in baking pan. I used an oval 2 & 1/4 quart baking dish. Place biscuit down first.
- Next, layer on scrambled egg mixture, bacon and cheese. Bake for 25-30 minutes, until biscuits are cooked through. Serve with a big bowl of fruit salad for a breakfast fit for a king!

Delicious but I did mine in a pyrex and the middle biscuit areas were a little doughy. Next time, I will probably either use a ceramic dish or bake longer like 30-35 minutes. We used what ever leftover meat we had the night before which was steak, yum! Keep the easy and yummy ones coming!

This is a great morning breakfast meal. I even made it ahead the night before, left it covered n the fridge and it cooked up just the same as before when I cooked it fresh.
Also I once substituted the bacon for crumbled sausage. One other time I didn’t have any Parmesan so I substituted feta cheese. Wonderful flavor!

Love how simple this recipe is, but I like eggs and used eight eggs. I chopped green onion and sauteed them in butter. I scrambled eight large eggs and added them to the onions with butter cooking the eggs halfway through. I didn’t want dry eggs.. Biscuits were on the bottom of the pan with bacon crumbled in top, parmesan sprinkled, egg mixture next and finally Colby Jack and cheddar cheese on top. Salt and pepper to taste. Red pepper flakes is you want a little bite. A very simple.recipe packed with flavor!
