Cheesy Crockpot Cowboy Casserole

Cheesy Crockpot Cowboy Casserole
- 1/4 cup diced onion
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp Mrs. Dash
- 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
- 1 can of cream of mushroom soup
- 1 lb ground beef browned and drained
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese

- Place all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
- Cover and cook on high for 4 hours or on low for 7-8 hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

I just put this in the crock pot and i went to stir it all together only problem it seems really watery everything is drained and i used cream of chicken 1 can and lean pork instead of ground beef any ideas on how to thicken the watery base?bI also added carrots to this and refried beans!

Corey I have never purchased Mrs Dash but at the grocery store there were so many flavors I was not sure what to get.

I know the recipes says there will be no leftovers, but with only 2 in our household, there are several meals in this casserole. It is delicious.. It really is, but my question is…. since we have leftovers, can this be frozen without ruining the potatoes. I cut them very, very thin so I’m thinking it will be alright. Just wanted to hear from the community. Thanks, Rita
Is it necessary to brown ground turkey or can I put it in raw? Is the browning done just to have a chance to drain off grease or is it unsafe to add raw turkey?
I have only made this by browning first. Has anyone else put raw turkey in?
