Cheesy Crockpot Cowboy Casserole

Cheesy Crockpot Cowboy Casserole
- 1/4 cup diced onion
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp Mrs. Dash
- 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
- 1 can of cream of mushroom soup
- 1 lb ground beef browned and drained
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese

- Place all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
- Cover and cook on high for 4 hours or on low for 7-8 hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

- 1 can of diced tomatoes with liquid
- 1 cup canned corn drained
- 1 can dark red kidney beans drained
- 1 cup of shredded cheddar cheese

Two thumbs up! Turned out perfectly with frozen vegetarian crumble and 2 sweet potatoes plus 1/2 a red pepper since I had those ingredients on hand. Cheddar here is expensive so I used a micro-grater to put it just on top of the steaming bowls served up straight from the slow cooker. Going to have to double the recipe next time 🙂 I actually forgot to put in kidney beans and it was still nice, the next time I will add them. Thanks to Angela in her comments above this is on my freezer list for when my baby arrives.
I’m trying this, but I added rotel instead of diced tomatoes. Also added a poblano chili and a couple jalapeno’s. Hopefully it will come out good.

How many carbs in a serving and what would you consider a serving? 1/2 cup?
I’m making this right now! Only I’m using leftover pulled pork instead of ground beef, black beans instead of kidney beans and added some sliced black olives! Hope it turns out!

I am making it tonight already have all ingredients except cheese in my crock-pot wasn’t till I came back and read a few comments did I find out to drain beans. I even came to check recipe before adding them, oh well. I am sure it wont hurt the meal any. Excited to find out how it tastes and share it on my blog and facebook.
