Cheesy Crockpot Cowboy Casserole - Family Fresh Meals

Cheesy Crockpot Cowboy Casserole

  • 1/4 cup diced onion
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/2 tsp Mrs. Dash
  • 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
  • 1 can of cream of mushroom soup
  • 1 lb ground beef browned and drained
  • 1 can of diced tomatoes with liquid
  • 1 cup canned corn, drained
  • 1 can dark red kidney beans, drained

  1. Place  all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
  2. Cover and cook on high for 4 hours or on low for 7-8  hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

Cook Time 4 hours

Ingredients
 

  • 1/4 cup diced onion
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/2 tsp Mrs. Dash
  • 1 lbs small red potatoes sliced thin (about 4-5 small red potatoes),
  • 1 can of cream of mushroom soup
  • 1 lb ground beef browned and drained
  • 1 can of diced tomatoes with liquid
  • 1 cup canned corn drained
  • 1 can dark red kidney beans drained
  • 1 cup of shredded cheddar cheese

  1. Do you think I could do this as a freezer meal? Maybe just put everything (minus the cheese) in ziploc? Having a baby next month and trying to stock up the freezer with yummy & easy meals. Thanks!

      Angela, this is a great idea, I will try this in another two months when the third trimester rolls around. I have read that people put in shredded cheese in a seperate ziploc, even though dairy can get grainy after freezing, but it’s going ot melt over everything and it probably won’t be noticeable. With a newborn, at least, I won’t care and the rest of the family will be happy to have a hot meal on the table. So thanks and this is going on my Google Doc baby on the way freezer meal list 🙂

  4. I tried this tonight and instead of using ms. dash we used a steakhouse onion burger seasoning and added a fourth of cup of green peppers. It was delicious if you have not tried this recipe you must try it. Thanks for the recipe 😀 Delicious
