Cheesy Crockpot Cowboy Casserole

Cheesy Crockpot Cowboy Casserole
- 1/4 cup diced onion
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp Mrs. Dash
- 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
- 1 can of cream of mushroom soup
- 1 lb ground beef browned and drained
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese

- Place all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
- Cover and cook on high for 4 hours or on low for 7-8 hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

- 1 can of diced tomatoes with liquid
- 1 cup canned corn drained
- 1 can dark red kidney beans drained
- 1 cup of shredded cheddar cheese

Both my boyfriend and I do not like tomatoes. I can do sauces and pastes (I think (I’ve never tried!)) but I absolutely hate tomato chunks! What are your suggestions?

I saw this recipe today on Pinterest and had to try it. I didnt have corn so I subbed a can of green chilis. I also used pinto beans. I didnt have an onion so I chopped up some of the whites of some green onions. It looks and smells amazing. I cant wait to try it!!

Do you brown the hamburger meat first?
Yes. In the directions, you will see meat should be browned and drained. 🙂
I made this for dinner today. precooked the burger last night so it was easier to throw together in the morning. My husband got home before me so he put the cheese on and cooked a frozen load of bread to go with it. I was freezing when I walked in and it was soo nice to sit down to this warm, hearty, delicious meal! Thanks for the recipe 🙂
