Churro Chex Mix
If you asked me to name the one party snack I absolutely can’t resist, I’d have to go with Chex Mix. Man, that stuff is good! I can eat my way through a whole bowl of it if I’m not careful.
One of the best things about Chex Mix is that there are so many different ways to make it. The zesty, Worcestershire-spiked original flavor is fantastic, of course. But you can have tons of fun mixing it up with different versions for different occasions, like Fiesta Ranch Chex Mix for Cinco de Mayo, Pumpkin Harvest Chex Mix in the fall, and Holiday Muddy Buddies Chex Mix for the holidays.
For my latest twist on this classic snack, I’ve created a Chex Mix that has the spicy-sweet flavor of everyone’s favorite Mexican dessert, churros. And it’s really easy to make: just toss your Chex and peanuts with a mix of melted butter and brown sugar, bake them, and dust the mixture with cinnamon sugar. This Churro Chex Mix is the perfect sugar-and-spice snack.
How to Make Churro Chex Mix

- corn Chex cereal
- rice Chex cereal
- peanuts
- melted butter
- brown sugar
- cinnamon
- sugar
- Preheat oven to 350. Line a large baking sheet with parchment paper.
In a large bowl mix together corn Chex, rice Chex, and peanuts. In a separate small bowl, mix together melted butter and brown sugar. - Pour butter/brown sugar mixer on top of Chex mixture and stir until well combined and evenly coated. Pour mixture onto baking sheet. Bake 5 minutes.
- In the meantime, in a small bowl mix together cinnamon and white sugar and set aside.
- After cooking for 5 minutes, remove from oven. Sprinkle cinnamon sugar mixture over chex mix. Stir to coat all the cereal. Place back in the oven and cook for 5 more minutes.
- Enjoy this yummy snack mix!

- 1.5 cups peanuts
- 6 T melted butter
- ¾ cup brown sugar
- 1 T cinnamon
- ⅓ cup sugar

I love Churros and this looks wonderful, but what could be substituted for the peanuts for those of us who cannot eat nuts ?
You can just leave the nuts out, or perhaps add in another salty snack like pretzels?
