Is there anything better than a big juicy bacon cheeseburger? Your mouth just started watering a little bit…..didn’t it?
This soup delivers that same mouth watering taste, but in the form of an easy peasy crockpot recipe. Luckily for my vegetarian hubby, this Crockpot Bacon Cheeseburger Soup can easily be made vegetarian using soy crumbles.
Crockpot Bacon Cheeseburger Soup
- Start by cooking onions and browning your beef together, until meat is no longer pink.
- Next combine all ingredients EXCEPT for the shredded cheddar cheese, milk and flour.
- It helps to hire an extra cute helper for this 🙂
- Stir to combine ingredients. Cover and cook on LOW for 7 hours.
- When 10 minutes are left, you are going to add a thickener and your cheese. To make the thickener, combine milk and flour. Whisk until all clumps are gone.
- Uncover crockpot and stir in shredded cheese and milk/flour mixture. Cover and cook for the remaining 10 minutes, until cheese is melted.
- I served our soup with chopped up dill pickles to add that cheeseburger feel 🙂

Crockpot Bacon Cheeseburger Soup
Ingredients
- 1 lb ground beef or soy crumble for vegetarians
- 1 cup onions diced
- 2 cups shredded sharp cheddar cheese
- 14.5 oz diced tomatoes
- 5 strips of bacon cooked and crumbled (or soy bacon for vegetarians)
- 1/2 cup celery chopped
- 1 cup carrots shredded
- 2 cups potatoes cubed
- 8 oz cream cheese cubed
- 4 cups chicken broth or veggie broth for vegetarians
- 1/4 cup flour
- 1 cup milk
- 3-4 garlic cloves minced
- 1 tsp salt
- 1 tsp dried basil
- 1 tsp dried parsley
- 1/2 tsp pepper

Sounds so yummy. So going to be making this soon with a little various. Using ground turkey or ground chicken or maybe a combo of both instead of the beef or the crumble and greek yogurt instead of cream cheese, little less calories than the cream cheese but gives it the same taste.

Oh my goodness, this was amazingly delicious! I made it exactly as the recipe says — didn’t change a thing. It was absolutely perfect. Seriously mouth-watering. Sarah, the bacon will be soften and become part of the soup. If you would like to add some crispy bacon to the top, I think that would make an excellent garnish! I hope you enjoy!

Has anyone tried this recipe without the milk and flour? I’m thinking if you waited until the last 10 minutes to add the cream cheese, that would thicken it up. Just a thought. I’m going to try it. Sounds delish!

The cream cheese is not going to thicken the soup up much. I took some soup out for myself before I added the milk and flour. I don’t do well with milk but the rest of the family is fine with it. This is a very good soup either way however all 5 people in my family agreed that the soup tasted better without the milk and flour.

I know that you cook the meat before but then do you put it in the crockpot for 7 hours or put it in after?

Yes, you need the veggies to soften up and the flavors to blend nicely. If you are strapped for time, you could quickly saute the veggies in some butter to soften them up before adding them into the crockpot and then reduce your cooking time to 5-6 hours.

That was the only thing I found a bit lacking (for lack of a better word). The veggies didn’t soften up enough in the 8 hours (I did this because hubby was late coming home from work) it cooked. I would suggest parboiling or sauteeing the veggies (especially the potatoes) first. 🙂

Is there anything you can substitute for the potatoes and tomatoes? I’m allergic to night shade veggies. I normally just leave them out, or don’t make the dish at all… but this sounds way too yummy to just pass up! Any suggestions would be greatly appreciated!

Yes, that should work out great. I would add them half way through the cooking time, since they won’t need as much time to cook.

This looks SO delicious!!! I want to try this out tomorrow but I was wondering if I could use tomato sauce or paste in place of the diced tomatoes? My family likes the tomato flavor, but not the chunks.

Just throw the tomatoes in a blender first and they will never know it’s there but the flavor will still be right! 🙂

This did not work for us. It had no flavor except when I added the pickles. I made the vegetarian option (bc I keep kosher, so bacon is a no no), and it just tasted wrong. I am wondering if my prepping everything the night before and storing everything (veggie crumbles, onions, veggie bacon, and veggies) together in a Ziploc had anything to do with it. Maybe the flavors just melded together in that bag and then there was nothing left after cooking it. I will try it again and if I prep it before, store the ingredients separately.

LOVE LOVE LOVE this! I’ve done both the regular (non vegetarian version) and vegetarian version and they came out wonderful each time.
My only additions is sometimes, a little splash of pickle juice and powdered mustard. Otherwise, it is perfect as it is.
It’s become our hardy, go to dinner. Also, leftovers are awesome!

In the crock pot now and the house smells delish!!! I had to use ketchup instead of tomatoes though. Hope it does not mess up the taste. Also the cream cheese is still lumpy. Guess I thought it would incorporate into the soup. We’ll see how it turns out.

Verdict: AMAZING!!!! WOW! I served the girls and the phone rang so I was away five minutes. When I turned around youngest DD was at my elbow. Figures, since I was on the phone, right? But, no, she was asking for MORE! Oldest had also inhaled hers. Husband had a couple bowls too. He said this can’t be healthy. But I tried to healthify it with ground turkey and turkey bacon and low fat cheeses. Well, maybe I was a little generous with the cheese. 🙂 A HIT in our family and sure to show up again on the menu! The girls were even making noises about serving fries on the side.

I made this tonight and it was a hit! I don’t eat beef so turkey was the only change a made. I will definitely make again. It was very good with the chopped pickles. The pickles send it over the edge. And I will definitely use extra bacon as a garnish, it seemed to get lost in the soup but I’m sure added flavor.

Excellent. I made this soup on the stove top as I did not me read the recipe through before I started. It took about 40 minutes in a 8 Qt pot. I had some leftover crushed tomatoes, about 1 cup and used that instead of diced tomatoes. It worked out wonderful. A very user friendly, comfort meal in a bowl. I’ll use my crockpot next time

I’m going to make this in a couple of days for my 94-year-old dad. My personal preferences will be to omit the carrots and celery – nut sure what they have to do with a cheeseburger; and substitute 100% American Cheese for the Cheddar Cheese – as it’s what I prefer on a cheeseburger, and it melts better than Cheddar. I may not add the thickener if it seems good without it.
