Crockpot Buffalo Chicken Sandwiches - Family Fresh Meals

You all know I’m just crazy about Buffalo spice. I’ve used it in meatballspasta saladTater Tots – even cauliflower. And of course, I also just love my Crockpot. So you just knew I was going to have to find a way to make Buffalo chicken in the Crockpot.

In fact, I actually came up with a recipe for Slow-Cooker Buffalo Chicken Sandwiches way back in 2011. And that recipe was quite tasty…but it was also a little complicated. You had to cut up and brown the chicken and the veggies separately before loading them into the crock with about six other ingredients.

These days, I’m all about keeping it simple, so my new Crockpot Buffalo Chicken Sandwiches are way easier. They have only four ingredients: chicken breast, Frank’s Buffalo Sauce (to taste), Hidden Valley Dry Ranch Mix, and butter. And all you have to do with them is load the chicken and seasonings into the crock, cook it all day on low, shred it, and dot it with butter. That’s it!

You can enjoy this Buffalo chicken mixture lots of ways. Pile it onto bread or buns (with coleslaw, of course). Stuff it in a wrap with your favorite fixings. Or, if you’re feeling healthy, toss it into a salad. Whatever you’re in the mood for, it’ll work with you.

 

Crockpot Buffalo Chicken Sandwiches

Ingredients:
2.5 lbs boneless, skinless chicken breast
1 cup Frank’s Buffalo Sauce (Buffalo Sauce is a little more mild than their hot sauce)
1 package Dry Ranch Mix (or 2 TB of my DIY Ranch Mix)
1/2 stick of butter, cut into tabs
Your favorite bread/buns to serve on.
Topping: ranch or blue cheese dressing and blue cheese crumbles

 

Directions:
1. Place chicken in a 4-5qt crockpot. Mix together ranch mix and buffalo sauce until well combined.

2. Pour over chicken. Cover and cook on LOW for 6 hours or HIGH 4 hours. Once chicken is cooked, shred with 2 forks. Add in butter tabs and stir until melted.

3. Serve on your favorite bread or roll, and top with dressing and cheese crumbles.
