Who knew fajitas could be THIS EASY to make?
Fajitas are the best aren’t they? Just wait until you try these Crockpot Fajitas. Oh my goodness, they are so flipping good! The minimal prep will blow you away. So, what are you waiting for?!
How to Make Easy Crockpot Fajitas
Ingredients:
- 1 ½ lbs flank steak
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons soy sauce, preferably the low-sodium variety
- 1 (7oz) can of green chilies
- 4 cloves garlic, minced
- 3 bell peppers, any color, cut into slices
- 1 large onion, cut into slices
Directions
- Start by placing 1/2 of your onion slices on the bottom of the crockpot. Place flank steak on top of onions. (the onion ‘base” will keep the meat from drying out)
- Next, mix together the chili powder, cumin, paprika, salt and pepper. Sprinkle on top of the flank steak.
- Pour soy sauce over the top of the steak and season and spread minced garlic evenly over top of meat.
- Top with the rest of your sliced onions, green chilies and bell peppers. Cover and cook on HIGH for 5-6 hours until meat can easily be shredded with 2 forks.

Easy Crockpot Fajitas

I am going to try this with chicken rather then steak. Do they stay juicy with only the soy sauce as liquid? If i’m doing chicken, should I add in a little water? Thanks!!

There will be less fat for sure to keep things moist. The onions and peppers will release some liquid, but you might want to add some water or broth to be on the safe side. Let me know how it turns out 😉

OK so my 2 year old’s Dora fiesta party is this weekend and I want to double this recipe. Will you advise as to how much longer I should plan to cook this. I don’t want to mess up the fiesta food!!!! I personally have never made a double batch of these, but if I were going to, I would up the cooking time by 1-2 more hours. (depending on if you are going to cook on HIGH or LOW) IS there anyway you could barrow a second crockpot and just have 2 going at once?

Sure! But I would reduced the cooking time a little bit, since chicken tends to cook faster.

Once the time is up…do you shred right in the crockpot with the veggies still in there or do you take veggies out then shred? My husband is going to love these.. In the crockpot right now!

You could do low for 7-8 hours. Does your crockpot shut off then or switch to warm?

I’m not sure how to rate this recipe just yet. My first attempt was a disaster. Followed the recipe. Was a little skeptical about the 5 to 6 hours on high but that’s what was called for. The first couple hours it smelled great. At hour 5 it wasn’t smelling as good. Checked it and turned it off. Yes the meat was easily separated with a fork but it crumbled rather than shredded. Dry cardboard like texture. The vegetables had totally disintegrated into an unrecognizable glop. The whole pot looked more like a Sloppy Joe recipe than Fajitas. Maybe “high” on my crockpot is higher than most. In any case I think I’ll try it again on “Low”.

I would love to try this, however, flank steak has gotten so expensive since fajita’s became so popular. 1-1/2 lbs of flank steak is close to $20 and when it only feeds 4-6 people, that is just way too expensive. They look and sound delicious though! I wonder if any other cheaper cuts of meat would work?

I used 1.25 pounds of pre-cut “meat for stir fry” labeled @ the grocery store and meat ran me about $8 vs the $17 1.25pnd flank steaks. Seeing as these cuts are naturally not as tender or flavorful, I added 1/4 c of low sodium beef broth, cooked on low for 8 hours & the meat was very tender & soaked up the flavors well. Delicious! Made this tonight & it was delicious! I didn’t have a can of green chilies on hand, so I substituted a couple spoonfuls of diced jalapenos, and I added 1/4 cup of tequila. My husband raved about how good dinner was! Thank you for the recipe!

I am so sorry you didn’t like this Lorie. Yeah, THIS recipe is for steak. If using chicken, cooking times and seasonings should be adjusted. If you want to try it again next time, let me know and I can give you some adjustments for using chicken.

I will be trying this recipe tomorrow night with chicken instead. Reading through some of the comments, it sounds like cooking on low for a little less time and adding some chicken broth (how much?) will be good adjustments. Any other suggestions?? We have a chicken fajitas recipe I do in the oven that my whole family loves, but it is too hot to have the oven on for an hour tomorrow, so I’d love to try this instead. Help! 🙂

If you cut up the meat into cubes and small strips before putting into the crockpot how long should you cook it for on high? I was thinking maybe 3 hours, but since I’ve never made this before I don’t want to mess it up.

I made these tonight and it came out not so great. Followed recipie by the book, I used flank steak. It was in the crockpot on high for 5 hours. Smelled amazing but super liquidy. I could only finish one before tossing. I’m thinking like the other reader that 5 hours on high was way too long. I like more of crunch with my veggies in fajitas. Won’t be making this again.
