Easy Lunchbox Cobb Salads

But there are salads and salads. The kind you were probably picturing was a side salad – a light mixture of greens, other veggies, or fruits that goes along with a more substantial main course. It’s a good way to get your healthy veggies in, but it’s not the center of the meal.

This is most definitely not that kind of salad. This Cobb salad is a substantial salad, loaded up with protein and fats as well as healthy veggies. It’s got creamy avocado, hard-boiled egg, crunchy bacon, and cherry tomatoes, all piled onto a bed of chopped greens.

How to Pack Easy Lunchbox Cobb Salads

  • 4 cups lettuce mix
  • 1 pint cherry tomatoes, cut into quarters
  • 4 slices bacon, chopped
  • 4 eggs, hard boiled and chopped
  • 1 avocado, diced
  • 1 cup almonds
  • 4 cups grapes
