Irene’s Power Muffins
One of my dear friends Maria has had a remarkable weight loss and body transformation over the past year. A couple weeks ago, I got to see her for the first time in a couple months, and her jaw-dropping transformation blew my mind. I of course drilled Maria for all of her secrets.Besides working out like a beast and eating healthy, she has a phenomenal trainer, Irene, that she sees every week. This awesome recipe came from Irene. Maria said she swore by these power muffins….easy to make, low calorie, protein packed, filling, AND delicious.
I HAD to give them a try. She was right! I have been making a batch of these every week to have in the morning, or before workout sessions. I love everything about them. Thanks Irene!

Irene’s Power Muffins
- Preheat oven to 350 degrees. Mix all ingredients together.
- Divide mixture into muffin pan (making 12 muffin) and bake for 12-15
minutes. Have fun with the different add-ins to make the perfect muffin for you!

Ingredients
- 2 cups dry oatmeal
- 2 scoops protein powder vanilla
- 2 bananas
- 4 egg whites
- 1 tsp baking soda
- 1 tbsp vanilla extract
- 1 tsp cinnamon
- <<<<<<<<Optional Add-ins>>>>>>>>>>>>
- Try adding 1 cup of these fun add-ins: almonds walnuts,raisins or craisins
- I also added in 1 tbsp of chia seed.
Instructions

hi!! my first batch of these are in the oven now…can’t wait to taste them! thanks for this recipe. i was wondering if you had any fun or interesting ways to use the egg yolks that are left over? a healthy custard recipe or something like that? thanks!!!

so i didn’t make custard, but i used the egg yolks from a second batch i just made as egg glaze for sugar cookies i made with my little boy. we had a blast coloring the yokes, painting the cookies and watching them bake. maybe not SUPER healthy hehe, but definitely a lot of fun and at least the egg yolks didn’t totally go to waste!

What kind of protein powder did you use and how big is each scoop? Thanks!
Hey Heather! I used Trader Joe’s Whey protein. I believe most protein powders come with a standard scoop. I think 30 grams.
Can I replace the banans with apple sauce?? I HATE BANANAS!!! The taste, smell and texture make me gag :S weird I know! Or should I use applesauce/yogurt?? Any suggestions???
Maybe try a combo of Greek Yogurt and apple sauce. Let me know how that turns out!
Hi Corey! Does it matter what type of protein powder you use (I generally use a soy and lactose free protein powder)? Also, some “scoops” might measure differently-does that matter ? Thank you!
I am sure any protein powder will work great. I have only used whey, but I really don’t see that influencing the recipe all that much. The scoop I used measures at about 15.5 grams. I think all the scoop are similar, so I wouldn’t worry too much about that either 🙂 I hope that helsp Ana! XO
