A zesty treat for your mouth.
Know what’s really fun to say? Pimento. Try it with me: pi-MEN-toe. Doesn’t that just feel zesty in your mouth? Like a little red pepper, which is exactly what it is. Pimentos are as much fun to eat as they are to say. They’re not as spicy as the name makes them sound, but kind of sweet, with a little vinegary tang because they’re usually pickled.
All of which makes them the key ingredient in that classic Southern treat, pimento cheese spread – a mix of cheese, mayo, and pimentos that’s great as a dip or a sandwich filling. My version of Pimento Cheese Spread uses the standard blend of cream cheese, cheddar, mayo, and diced pimentos – with just a touch of cayenne to add the heat that’s missing from the pimentos themselves. You can add more or less, depending on how fiery you like it.
This dip is great with veggies, pretzels, crackers, or spread on bread. It makes an awesome grilled cheese filling, too. And to make it even more fun, every time you dip a cucumber slice and bite into it, just say, “Pi-MEN-toe!”
Recipe Tips
- You can adjust the spiciness by adjusting the cayenne pepper.
- You can use any combination of cheddar cheese depending on your liking.
- Makes excellent grilled cheese filling.
- Serving suggestion: pretzels, crackers, celery, cucumbers, white bread.
Pimento Cheese Spread
- Place all ingredients in a bowl and mix with an electric mixer until combined.
- Place in serving dish and garnish with additional fresh chopped chives.

Pimento Cheese Spread
Ingredients
- 2 ½ cup shredded cheddar cheese any combination is fine!
- 8 oz cream cheese - softened to room temperature
- ¾ cup mayonnaise
- ½ tsp garlic powder
- ½ tsp ground cayenne pepper more or less, depending on taste
- 1 tsp fresh chopped chives
- 1 4 oz jar of diced pimentos- drained well
Instructions
- Place all ingredients in a bowl and mix with an electric mixer until combined.
- Place in serving dish and garnish with additional fresh chopped chives.

As far as I’m concerned, Pimento Cheese Spread/Dip is supurb on anything & everything: sandwiches, burgers, grilled cheese sandwiches, SERIOUSLY EVERYTHING! I like to use a combination of 2 cheddars: sharp orange cheddar & “Cabot” extra sharp white cheddar. I sometimes use Nufrachel instead of full fat cream cheese with good results. I cannot say enough good things about Pimento Cheese! I was first introduced to it when my DH & I lived in Savannah, GA for a couple of years for our Company. My girlfriends & I lunched in various ‘Tea Rooms’, & we’re always pleased by each individual Tea Room’s Pimento Cheese. Thanks for posting this, Corey. I hope that everyone tries it, if they haven’t already fallen in love w/it! 💓
