Air Fryer Zucchini Fries
My favorite meals, as you all know, are the ones that are both healthy and delicious. And that can be a problem when it comes to vegetables. Because most of the things you can do to them to make them delicious also make them less healthy. Case in point: zucchini fries. These magically turn a fairly tasteless vegetable into a crunchy, savory, irresistible treat.
It’s totally easy to gobble up a whole zucchini, or even two, in this form. But the problem is, you’ll also be gobbling up tons of greasy, oil-soaked breading on the outside of the zucchini. So even though you’re eating your veggies, you can’t feel all that good about it. Unless, of course, you have an air fryer.
With one of these babies, you can make zucchini “fries” with literally zero oil. Just dunk the zucchini strips in egg and seasoned breadcrumbs, lay them out in a single layer the fryer basket, and cook them for seven or eight minutes. They come out with a gorgeous, crispy, golden brown coating that’s full of flavor, with tender, perfectly cooked zucchini on the inside. And no extra fat! How to make Air Fryer Zucchini Fries
- Wash and prepare your zucchini by cutting in half horizontally and slice.
- In a medium bowl add the eggs and whisk.
- In another medium bowl add the breadcrumbs, garlic salt, and parmesan cheese and whisk until combined.
- Dip the zucchini slices into the egg and immediately into the breadcrumb mixture. Toss the slices to cover evenly.
- Continue with all slices and place in a single layer in the air fryer (you may have to do two batches).
- Bake at 400 degrees for 7-8 minutes until golden brown.
- Enjoy with your favorite dip! We love to dip ours in ranch , Chick Fil A Sauce or Outback Blooming Sauce!
Can you add other seasonings to the breadcrumb mixture?
- Of course! This recipe just uses the classic combo of garlic salt and parmesan, but you can easily spice them up with a teaspoon of your favorite seasoning blend. Italian, Mexican, Cajun, ranch…whatever floats your boat!
Are Air Fryer Zucchini Fries keto-friendly?
- Well, there are some carbs in the breadcrumb coating. But there’s an easy fix for that: just replace the breading mixture with equal parts parmesan and low-carb almond flour. Season this mixture with the garlic salt or any other spice you like.
I do not have an air fryer. Can I make these zucchini fries in the oven?
- Sort of. They don’t cook as fast, and they aren’t as perfectly crisped on all sides, but you can still produce reasonably crunchy, low-fat zucchini fries this way. Just lay them out on a parchment-covered baking sheet and bake at 425°F until they’re golden and crisp (about 25 to 30 minutes).
