Recipe Notes:

  • Heat the butter and melt the marshmallows over relatively low heat so the ingredients don’t scorch while the heat is being distributed throughout the entire mixture.
  • Vanilla extract and/or almond extract can also be added to the melted marshmallows with the food coloring.
  • The buttery crackers and ultra flaky texture really shine in this recipe.
  • I didn’t crush the Ritz very much. They do break apart when mixing them into the marshmallow mixture. If you crush them too much, you’ll have pretty small crumble instead of the layered effect. They’re not super attractive in the pan, so feel free to place a few decorative crackers over the top or don’t worry about!

  3. Add Ritz crackers. You can gently crush them while adding them or even leave them somewhat whole. They will crush as the mixture is stirred together.crackers added to pot
  4. Transfer mixture to a 8×8 or 9×9 square pan that has been greased or lined with parchment paper.cracker mixture added to pan
  5. Press the mixture into an even layer. Top with some larger pieces of Ritz cracker, if desired (simply for aesthetics).more crackers added to top

  1. Took a chance with this one, not knowing if it would be obscure or totally delicious, but these were actually so good! They taste just like buttery shortbread cookies to me. I will say, I think this recipe would be better if you increase the ritz to marshmallow ratio. I used the mini ritz sleeves and ended up adding 112 crackers, and there was still seemingly way too much marshmallow in proportion. I usually love extra marshmallow in my standard Rice Krispie treats but this was just a lil much we thought. Still wonderfully yummy, creative, and so easy and quick to make!
