Roasted Buffalo Cauliflower
I just can’t help myself…I keep finding new ways to mess with Buffalo sauce.
From wraps to bites to meatballs to pasta, I thought I’d tried it all. But oh, how wrong I was! Just when I thought there was nothing new left to Buffalo-ize, I discovered that Buffalo seasoning goes just wonderfully with…cauliflower. Yes, cauliflower. See, cauliflower is a wonderful veggie in a lot of ways. It’s got plenty of fiber and protein, tons of vitamin C, and practically no fat. And it’s got a nice texture that blends well with other things. But by itself, it just doesn’t have that much flavor.

So, Buffalo spice to the rescue! Tossed with some hot Buffalo sauce and olive oil, the mild-mannered cauliflower becomes…Super Veggie!
This Roasted Buffalo Cauliflower makes a great addition to your menu plan, especially for vegetarian guests who are used to being stuck with “just the side dishes.” But it’s also a healthy, fun side dish for any time of year. It’s healthy enough to fit in with your New Year’s resolutions…spicy enough to keep you warm all winter long…and tasty enough to hold your interest well into the springtime.
Roasted Buffalo Cauliflower
INGREDIENTS:
1 large cauliflower
1/4 cup olive oil (or more)
1/5 cup Frank’s RedHot Wings Sauce (buffalo style)
1/2 teaspoon Tabasco
salt
DIRECTIONS:
1. Preheat oven to 400 degrees F. Remove all the green leaves and the bottom of the cauliflower. Place it in an oven safe dish. Drizzle the olive oil, use a brush or hands to coat all of it. Even the bottom. You may need to use a bit more, depending on the size of the cauliflower.
2. Next, add the hot sauce and Tabasco and coat the whole cauliflower. I flipped it upside down and added some to the insides. Season well with salt. Cover dish well with foil. Do not allow any steam to leave the dish. Cook for about 45 – 50 minutes. Depending on the size of the cauliflower. It is cooked through once you’re able to pierce easily with a knife. Remove foil, turn on to broil and allow the top to brown just a bit! Keep an eye on it, as it will burn fast.
3. Let it cool for just a bit before slicing. Use a spoon to drizzle any remaining liquid in the dish over the cauliflower. Most likely you’ll need to season it with a bit more salt when you serve it.
Serve it with a salad and you’ve got yourself a healthy meal for the New Year!
