Rolo Stuffed Chocolate Chip Cookies
As we all know, the chocolate chip cookie is an American classic. In fact, most people would probably say there’s no way to improve on it.
But of course, I’m not most people. When I see a dish that’s good all by itself, it just makes me want to turn it from good to fantastic. So I’ve come up with all kinds of variants on the basic recipe, from Pumpkin Oatmeal DOUBLE Chocolate Chip Cookies to Oreo Stuffed Chocolate Chip Cookies.

But this time, I think I’ve actually taken the chocolate chip cookie to a whole new level. Because these Rolo Stuffed Chocolate Chip Cookies are way more than just a cookie…they’re a chocolate-caramel quadruple threat.
That’s quadruple as in, one, start with balls of chocolate chip cookie dough in a mini muffin plan. Two, tuck a Rolo candy into each ball, and bake them into little caramel-loaded cookie bombs. Three, invert the baked cookies and cover them in creamy chocolate frosting. And four, drizzle them with white chocolate glaze.
The finished result is so completely loaded with chocolate and caramel goodness, it’s probably against the law in some states. But once you try it, I think you’ll agree it’s well worth the risk.
Rolo Stuffed Chocolate Chip Cookies
Ingredients
1 pouch (17.5 oz) chocolate chip cookie mix (or your favorite chocolate chip cookie recipe)
1/2 cup butter, softened
2 tablespoons all-purpose flour
1 egg
36 rolo candies
1 container (1lb) Rich & Creamy chocolate frosting
1/3 cup white vanilla baking chips
1 teaspoon shortening
NOTE: You will need a mini muffin tins for this recipe.
Directions:
1. Heat oven to 375°F. In large bowl, mix together cookie mix, softened butter, flour and egg until soft dough forms. Next, shape into 36 cookie balls.
2. Place cookie balls in mini muffin cups.
3. Press 1 rolo in center of each cookie.
4. Bake 10 to 12 minutes or until edges are golden brown. Cool in pan for about 10-15 minutes. Place on cooling rack to cool completely. 5. Place cooling rack of cookies over another cookie sheet or waxed paper for easier cleanup. Turn cookies over so bottom side is up and rolo side is down.
5. In small microwavable bowl, microwave frosting uncovered on 30 second at a time until thin enough to pour. Pour warmed frosting over each cookie to completely cover. (about 1 TB) Rewarm frosting as needed.
6. In another small microwavable bowl, microwave white vanilla baking chips and shortening uncovered on 30 seconds at a time, until mixture smooth. Drizzle mixture over. Let cool until frosting glaze is set (this can take up to 3-4 hours) Store in airtight container at room temperature.
