Hot lunch or cold lunch? It’s up to you!
Tortellini have got to be one of the cleverest ideas ever to come out of Italy. Forget Columbus, forget Galileo…these little bites of pasta-wrapped cheese are true genius. They’re good in so many things: soup, red sauce, cream sauce. And they’re just as tasty cold as they are hot.
So, when I was coming up with a lunch box idea based on tortellini, I asked myself, “Should it be a hot lunch or a cold lunch?” And I decided the best possible answer would be a lunch that you can enjoy either way.
So that’s just what I made. This Tortellini Pasta Box has a cup of cooked tortellini, accompanied by side cups of pizza sauce and shredded cheese. You can choose to top the tortellini with the sauce and cheese and pop the whole thing in the microwave, so you have hot tortellini with sauce and melted cheese…or you can just eat the tortellini cold, dipping them into the sauce and cheese on the side. It’s a perfectly satisfying lunch either way, especially with some sliced cucumbers and chocolate-covered almonds to round it out.
Tortellini Easy Lunchbox Idea
4 cups tortellini
1 cup pizza sauce
1 cup shredded cheese
32 chocolate covered almonds
1.5 cucumbers, sliced
- Add your lunch ingredients into your lunchbox. Cover and refrigerate until ready to use. Use within 3-4 days.
