Fruity Pebbles Breakfast Bread Recipe - Family Fresh MealsI’m not gonna lie, folks: buying the ingredients for this recipe felt kind of weird. I mean, I’ve always been all about homemade breakfasts. I’ve mastered breakfast sliders and smoothie bowls. I make big batches of breakfast quesadillas and freeze them for a quick heat-and-eat meal. Even on days we have to grab and go, I’ll throw together a healthy breakfast box. So getting that box of Fruity Pebbles off the supermarket shelf was a new experience.

But honestly, I had no choice. Because once I knew there was such a thing as Fruity Pebble Breakfast Bread, how could I not try it?

So I got that box home, and I started mixing ingredients. I whipped up a simple batter from flour, sugar, oil, Greek yogurt, baking powder, and salt, and then folded two cups of the Fruity Pebbles right into it. As I poured it into my loaf pan, I was wondering to myself, “Can this possibly work?”Breakfast break on cooling rack

News flash: It did! The cereal softened in the batter as it baked, so it had a crunchy top and a moist, sweet inside that melts in your mouth. Topped with a simple cream cheese icing, it was kind of like a lighter version of fruitcake. It’s delicious fresh out of the oven, and any that’s left over makes a great addition to the grab-and-go breakfast repertoire.

Can you make this with any other kind of cereal?

Any sweet, crunchy cereal should give you pretty much the same texture. You could replace the Fruity Pebbles with Cocoa Pebbles for a chocolate bread, or Honeycomb for a sweet honey bread. Feel free to experiment!

How to Make Fruity Pebble Breakfast Bread

Ingredients you will need:
sugar
plain greek yogurt
vegetable oil
eggs
vanilla
salt
baking powder
all-purpose flour
Fruity Pebbles cereal

Cream Cheese Drizzle
cream cheese
butter
vanilla
powdered sugar
milk

  1. Mix sugar, oil, greek yogurt, eggs and vanilla until smooth. Add salt, baking powder and flour, mix until smooth. Fold in cereal.Fruity Pebbles Breakfast Bread - ingredients in mixing bowl

  3. Remove from oven and allow to cool on cooling rack.
  4. Now let’s make the Cream Cheese Drizzle. Beat cream cheese, butter and vanilla until creamy. Gradually add powdered sugar, beating until smooth. Add milk, beat until smooth. Drizzle over bread.

This Fruity Pebble Breakfast Bread is delicious fresh out of the oven, and any that’s left over makes a great addition to the grab-and-go breakfast.

Ingredients
 

  • 1 ¼ cup sugar
  • 1 cup plain greek yogurt sub out
  • ½ cup vegetable oil
  • 3 large eggs
  • ½ teaspoon vanilla
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 1 ½ cups all-purpose flour
  • 2 cups Fruity Pebbles cereal

Cream Cheese Drizzle

  • 4 ounces cream cheese
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • ½ cup powdered sugar
  • 2 tablespoons milk

Instructions

  • Mix sugar, oil, greek yogurt, eggs and vanilla until smooth.
  • Add salt, baking powder and flour, mix until smooth
  • Fold in cereal.
  • Spray loaf pan with non-stick spray.
  • Pour batter into pan.

    1. Hi Chassidy. You are going to want to divide the bread into slices.

  4. Great bread! Some have asked how to make this healthier. Well you can substitute unsweetened apple sauce for the eggs (I substituted for one egg). And you can use 3/4 cup butter milk instead of the yogurt. And definitely cut back the sugar. I used 3/8ths cup of sugar as the cereal is sweet already. It came out fantastic! Just the right amount of sweetness, nice and moist with a good rise. I’ll probably make this again!
