Bacon Wrapped Green Bean Bundles - Family Fresh Meals

For big holiday dinners, the main course is easy. A big roast turkey, a ham, or a lasagna will easily feed a crowd and make a showy centerpiece for the table.

The real problem is the veggies. With that big, show-stopping main dish in front of them, how are you supposed to get everyone excited about a bowl of plain old green beans?

The answer is, you don’t serve plain old green beans. You serve special green beans. You serve… Bacon Wrapped Green Bean Bundles.

No one could ever call these plain. They’re little, portion-sized bunches of beans wrapped in bacon, roasted until they’re tender-crisp, and glazed with a salty-sweet sauce flavored with fresh shallots. They’re a veggie dish that refuses to be upstaged by the protein.

Serve these at your holiday meal, and it might just be the veggies that everybody asks for seconds of.

 

Bacon Wrapped Green Bean Bundles

Ingredients:

1 lb fresh green beans
16 slices pre-cooked bacon
2 tablespoons of finely chopped shallots
6 tablespoons light soy sauce
4 tablespoons brown sugar
1/2 teaspoon pepper, divided
4 tablespoons unsalted butter
1/2 teaspoon coarse kosher salt
cooking spray

  1. Preheat oven to 400°F.  Quickly blanch green beans in boiling water.
  2. Combine shallots, soy sauce, brown sugar, and 1/4 teaspoon pepper in medium saucepan on medium-low. Simmer sauce for about 2-3 minutes,  until sauce thickens. Reduce heat to low and whisk in butter until melted and combined. Remove from heat and set aside.Bacon Wrapped Green Bean Bundles - Fresh green beans
  3. Line baking sheet with parchment paper or foil. Place 6-8 beans into the middle of 1 bacon slice. Wrap bacon around the center and place seam side down on baking sheet.Bacon Wrapped Green Bean Bundles - Fresh Beans laid on bacon strips
  4. Repeat with remaining beans. Coat top of beans with cooking spray and season with salt and remaining 1/4 teaspoon pepper. Bake 4–5 minutes or until bacon is crisped.Bacon Wrapped Green Bean Bundles - Fresh Beans wrapped in bacon on baking sheet
  5. Remove from oven and brush bundles with beans with one-half of the soy mixture. Continue to bake for 3 more minutes. Remove beans from oven and brush remaining glaze.Bacon Wrapped Green Bean Bundles - Served on a plate
