Breakfast Totchos
Tater Tots are great for nachos, and they’re great for breakfast. So what could be better than putting them together as Breakfast Totchos?
It was a great day when I discovered that you could make nachos with Tater Tots (Totchos). Swapping out the chips for crunchy little potato puffs instantly takes them to the next level. But it took me a couple of years to take the logical next step: making a breakfast version. If you can make breakfast burritos and breakfast taquitos, why not breakfast Totchos?
Once I had the idea, creating the recipe was simple. I just spread the Tater Tots on a baking sheet and covered them with all my breakfast faves: eggs, sausage, bacon, and some Colby Jack cheese. Five minutes under the broiler, and I had a complete Mexican breakfast feast on a plate.
Cooking the Tater Tots: For extra crispy tots, cook your tater tots according to the package directions. Using an air fryer at 390°F for 15 minutes ensures they come out golden brown and crispy.
Layering: Spread the tater tots into an even layer on a large baking sheet. This prevents them from becoming a big pile, ensuring they cook evenly and get crispy on the top.
Flavor Boost: Cooking your sausage first and using the leftover grease to cook your scrambled eggs adds exceptional flavor and prevents the eggs from sticking to the pan.
Cheese Options: Experiment with different cheeses like pepperjack, Monterey Jack, sharp cheddar, white cheddar, or mozzarella for varied flavors.

Broiling: Keep a close eye on the totchos while they broil on high. You want the cheese to melt completely without burning, so watch until it’s perfectly melted.
Customizing: This recipe is flexible. Adjust the quantities based on how many people you are serving. You can easily make a single serving or double it for a crowd.
Breakfast Totchos
- Make sure that your tots, scrambled eggs, and breakfast sausage are all ready to go. Set your broiler to high.
- Spread the tater tots into a single layer on a large baking sheet. They can be overlapping a little bit, but you want to make sure that they are not just in one big pile.
- Spread out the scrambled eggs on top of the tater tots and then sprinkle on the sausage, cheese, and bacon.
- Place the tray in the oven and let your totchos broil on high for about 5 minutes, or until the cheese is completely melted.
- Serve and enjoy!
