Cheesy Crockpot Cowboy Casserole

Cheesy Crockpot Cowboy Casserole
- 1/4 cup diced onion
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp Mrs. Dash
- 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
- 1 can of cream of mushroom soup
- 1 lb ground beef browned and drained
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese

- Place all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
- Cover and cook on high for 4 hours or on low for 7-8 hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

- 1 cup canned corn drained

Would a thick béchamel sauce work in place of the cream of mushroom soup? I try to stay away from anything in a canard all processed stuff. Thanks! This looks really yummy!
Rather than use a bechamel sauce, I found a recipe for condensed cream of mushroom soup to use instead of the canned stuff. OMG! Now I have 2 wonderful recipes to add to my collection. This casserole is hearty and delicious. And you have GOT to try the homemade cream of mushroom soup on the gimmesomeoven blog! I’m sure this Cowboy Casserole is great with the canned stuff, but the homemade is sure to take it to the “awesome” level!
I’m making this now and don’t have an all seasoning. Do you think it will be ok without that entirely or do you have another suggestion

Sounds pretty simple to put together and delicious. It’d be good with chicken or ground pork too!
