How to Make Crockpot Artichokes
Artichokes have always been one of my favorite vegetables. Steamed artichokes are delicious, fun to eat and are super low in calories. BONUS. This Crockpot Artichoke recipe takes all the guess work out of cooking them. It was brought to my attention by a couple friends, that they had never even HAD an artichoke before. WHAT?! This is a crime! hehe
If you are an artichoke virgin, please don’t wait any longer. Give this yummy veggie a try. You can even dip it in butter, flavored mayo or aioli 🙂
How to Make Crockpot Artichokes
- First, wash artichokes. Trim each artichoke by cutting off stem at the base of the artichoke, and the top inch of the artichoke.
- Place trimmed artichokes in your crockpot. Brush the lemon juice over each artichoke.
- Next place minced garlic on top of each artichoke. Rub in with a spoon.
- Drizzle olive oil evenly over each artichoke top.
- Pour in 2 cups of vegetable broth.
- Cook on HIGH for 3-4 hours. My artichokes were medium/large and were perfect at 3 hours. So depending on the size of your artichokes, you might want to cook a little less or more.

- 4-6 large artichokes. I have a 6 QT oval crockpot and was able to five 5 large
- 2 cups vegetable broth
- 4-6 cloves of garlic minced
- fresh juice from 1 large lemon about 2 TBS
- 3 TBS olive oil
- salt and pepper to taste

- Place trimmed artichokes in your crockpot. Brush the lemon juice over each artichoke.

OMG Corey!!!!! This is genius!!!! We are so trying these! Just another tip for those who don’t normally eat them…the best time to buy great artichokes in in August. Also when picking them out give them a squeeze. You want to pick out the ones that are fat and round. They are the best. Just like everything there is a male version and a female version of artichokes. Crazy I know but if you can find the female versions they are more succulent!!! Can’t wait to try this!!!!

When to buy artichokes depends on their origin. I’m in south Texas now and August is good. But on the West coast April-May is best. And don’t be put off by outer leaves that are “frost kissed” – kinda dark and rough looking – if it is not shriveled it may be one of the best. Love the idea of cooking them in a crockpot! Can’t wait to give that a shot. Thx for the recipe!

Would it still be 3-4 hours if I was only cooking 2 artichokes?
Arianne, I have never made only 2 artichokes before. Sorry 🙂 What I would try is cooking for 2-3 hours.
