How to Make Crockpot Artichokes
Artichokes have always been one of my favorite vegetables. Steamed artichokes are delicious, fun to eat and are super low in calories. BONUS. This Crockpot Artichoke recipe takes all the guess work out of cooking them. It was brought to my attention by a couple friends, that they had never even HAD an artichoke before. WHAT?! This is a crime! hehe
If you are an artichoke virgin, please don’t wait any longer. Give this yummy veggie a try. You can even dip it in butter, flavored mayo or aioli 🙂
How to Make Crockpot Artichokes
- First, wash artichokes. Trim each artichoke by cutting off stem at the base of the artichoke, and the top inch of the artichoke.
- Place trimmed artichokes in your crockpot. Brush the lemon juice over each artichoke.
- Next place minced garlic on top of each artichoke. Rub in with a spoon.
- Drizzle olive oil evenly over each artichoke top.
- Pour in 2 cups of vegetable broth.
- Cook on HIGH for 3-4 hours. My artichokes were medium/large and were perfect at 3 hours. So depending on the size of your artichokes, you might want to cook a little less or more.

- 4-6 large artichokes. I have a 6 QT oval crockpot and was able to five 5 large
- 2 cups vegetable broth
- 4-6 cloves of garlic minced
- fresh juice from 1 large lemon about 2 TBS
- 3 TBS olive oil
- salt and pepper to taste

I see you cooked it on HIGH for 3 hours. I can’t get home to turn it on for that short of time. Do you think they would work on LOW for 6 hours? Or will that shrivel them up too much?
I have done them on low for 5 hours before. Do you have a timer, so it could shut off after 5 hours?

We like the small artichokes. Can you suggest how to adjust the cooking time? I would be cooking about 9 to 12 small ones. Also can they be cooked on low? Thanks, looking forward to trying this!
Only 2 cups of liquid (broth) for 3 hours on high?
Won’t the broth evaporate before time is up?

Nope, You should still have some liquid by the end. It’s only used to steam the artichokes 🙂

Well tried them two days ago, followed the recipe perfectly and it was a disaster.
The store only had the really small artichokes or jumbo ones and the small ones looked sickly so I went with the healthier bigger artichokes and there are posts here and from the original recipe poster that using the bigger ones would be OK. Not for me.
4 hours later the leafs were still mainly raw and uncooked… I transferred them to the boiler and like an idiot forgot about the olive oil I added to the artichokes originally and put more oil in the water (very little) but the artichokes came out oily and into the trash.
Not sure how this would even work with medium sized artichokes… Definitely will stick to boiling artichokes in the future.
I am so sorry this didn’t work out for you Mo. As you can see from the pictures I felt like my artichokes were pretty large, and you can tell by the finished product, any longer in the crockpot would have cause them to over cook. Did you cook them on HIGH? I don’t see how any vegetable you put in a slow cooker for 4 hours on HIGH could come out raw. Hmmmm. What size crockpot did you use?

Yes it was on high and I have a 6 quart crockpot that is not that old, maybe not even a year and it is an excellent crockpot.
Yeah Corey the artichokes I had were large, I could only stuff 3 in a 6 quart crockpot. I don’t normally like the jumbo sized and stick to the medium-sized. The smaller ones are to small cause I LOVE artichokes.
I was on a time crunch running around getting dinner groceries and didn’t have an opportunity to go store-to-store looking for medium sized artichokes. Had to take what I could at first store I was at, which usually has the multi-sized artichokes. I looked at the size of them and thought they were from Texas LOL. Luckily I had candied baby carrots as a back up to crockpot braised short ribs and au gratin potatoes.

Oh my WORD! I have never seen artichokes THAT big. I considered the ones I used to be large, and I was able to get 5 in my 6qt. I guess if your artichokes were that big, they might not cook as fast. Sorry again that this didn’t work out for you. I wish you could have tried it with normal sized chokes 🙂 I really think you would have loved it! Oh well.
