Recipe Notes:

  • This stew was made in a 6-quart Crockpot, but you could make it in a larger pot. 
  • To make the stew thicker, stir in one tablespoon of cornstarch with 2 tablespoons of water (a cornstarch slurry)and mix it into the Crockpot 1 hour before the stew has finished cooking.
  • Easily double this stew if you have a large enough Crockpot and store half for a meal later in the week or to serve a larger crowd. 
  • A sprinkling of cheese, like grated Parmesan or crumbled feta, can add extra flavor to this stew.
Can I freeze this recipe?

This stew can be stored in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months. Thaw overnight in the fridge and reheat on the stovetop or microwave.

Ingredients
 

  • 1.5 lbs ground beef
  • 1 lb package kielbasa sausage sliced
  • 1 medium yellow onion diced
  • 2 garlic cloves minced
  • 3 large gold potatoes peeled and diced
  • 30 oz cans pinto beans rinsed and drained
  • 15 oz can whole kernel corn drained
  • 15 oz can diced tomatoes undrain d
  • 14 oz can Rotel undrained
  • 10 oz bag frozen mixed vegetables green beans, carrots, peas and corn
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 teaspoons freshly chopped parsley for garnish

Instructions

    This sounds super yummy! I noticed that the recipe calls for “30 oz cans pinto beans rinsed and drained”. How many cans of beans, exactly?

    1. That is usually 2 standard cans of beans.

  2. I am making this for dinner tomorrow night with a few substitutions. I am following the WW program so I’ll be using ground turkey instead of beef and turkey Kielbasa instead of smoked sausage. Can you please tell me what a serving size is? Looking forward to having this for dinner!
