But then there’s the main-course salad. This is a lot more substantial, with something like pasta or protein-rich beans to fill it out. It’s still got plenty of veggies, but it’s also got enough heft to make a meal of, with maybe just a piece of bread on the side.

This Cucumber Chickpea Salad is definitely the second type. It’s loaded with healthy veggies, including cucumber and green and red bell peppers, but it also packs in two cans of chickpeas for a solid protein punch. And with crumbled feta and a garlicky Italian vinaigrette, it’s got plenty of Mediterranean flavor, as well.

It’s also a super easy recipe that comes together in a matter of minutes, so it can be chilling in the fridge while you’re out enjoying the sunshine. It’s the perfect light, cool meal for a hot summer day – especially if there’s a vegetarian at your dinner table. And if you are following Weight Watchers (WW) it’s so very close to being a Zero Point salad!

Cucumber Chickpea Salad

Ingredients:
2 cans chickpeas
1 cup sliced and quartered cucumber
½ cup diced green pepper
½ cup diced red pepper
⅓ cup chopped fresh parsley
⅓ cup crumbled feta cheese

Dressing:
½ cup olive oil
½ cup red wine vinegar
1 tbsp Italian seasoning
1 tsp minced garlic

Directions:

1. Combine chickpeas, cucumber, peppers, and parsley in a large bowl.

Ingredients
 

  • 2 cans chickpeas
  • 1 cup sliced and quartered cucumber

  • ½ cup diced red pepper

Dressing
