Easy Breakfast Bites Recipe

For most of us, breakfast is a pretty routine meal. The routine may be turning on the coffeepot and pop some bread in the toaster, or pouring some cereal and milk in a bowl, or sprinkling some granola in a cup of yogurt, but whatever it is, it’s easy and familiar. You can do it with your eyes closed, even without being completely awake.

Now, there’s nothing wrong with a comfortable routine. But every once in a while, you want something different. Instead of stumbling groggily through the morning meal, you want to be shaken awake with a jolt of flavor to the taste buds.

They’re deliciously different, but not at all complicated. The ingredients are easy to keep on hand: just some eggs, cheese, refrigerated crescent dough, and the meat of your choice (or none, for a vegetarian version). They’re quick and easy to make, even on a busy morning. But the taste will shake you right out of your routine and into a whole new world of possibilities.

Easy Breakfast Bites

  • 8 oz tube of refrigerated crescent dough
  • 2 eggs
  • 8 slices , links or pieces of cooked breakfast meat (for vegetarian option, omit, or use vegetarian meat substitute)
  • 1/4 cup cheddar cheese
  • 1/2 tbs butter (to scrabble egg in)
  • salt and pepper in eggs to taste
  1. Preheat oven to 375 degrees. Beat 2 eggs and season with a pinch of salt and pepper. Scramble your eggs with the ½ tbsp of butter. Set aside in a bowl.
  2. Unroll your tube of crescent rolls and separate into triangles. On the large end of the triangle, layer a spoon full of eggs, about 1 Tablespoon of cheese and your choice of meat.Collage image showing how to make breakfast bites with different fillings
