Instant Pot Taco Pasta
My family just loves Taco Tuesday. Beef tacos, chicken tacos, fish tacos – pretty much anything with taco seasoning gets them running to the table with a big smile.
Normally, a taco dinner involves a lot of different parts. You’ve got the seasoned meat, the taco shells, the salsa, and any other veggies you want to tuck in. It makes for a lot of stuff to clean up afterward.
But a couple of years ago, I discovered that I could turn tacos into a one-pot dish in the Crockpot. So lately I’ve been thinking, why not try an even faster version in the Instant Pot?

Sure enough, it worked like a charm. For this Instant Pot Taco Pasta, I used the sauté setting to brown the beef, then added all the seasonings, tomatoes, and pasta shells. A quick five minutes on the manual setting, and everything was cooked to perfection. All I had to do was melt a little cheese on top and it was ready to go.
Serve this with traditional toppings and a few tortilla chips on the side, and it’s like a complete taco dinner – with only one pot to clean up.
Instant Pot Taco Pasta
Ingredients you will need:
ground beef, lean
beef broth
Water
Taco Seasoning or my easy homemade version HERE
diced tomatoes, undrained
white onion
garlic cloves
red enchilada sauce
Shell Noodles, uncooked
Cheddar Cheese, Shredded
Topping:
Shredded Cheese, sour cream avocado and or cilantro
- Set Instant Pot to saute. Brown beef and onions. Once ground beef is browned, stir broth, water, taco seasoning, tomatoes, garlic, enchilada sauce. Stir to combine.
- Next add in uncooked pasta. Stir again to combine.
- Cover and seal lid. Change setting to manual and adjust time to 5 minutes. Once time is up, use the quick release. Turn off Instant Pot. Top with cheese, and rest the lid on top for a couple minutes to allow the cheese to melt.
- Serve topped with sour cream, shredded cheese and cilantro.

Ingredients

Can I make this in the crock pot if I don’t have an instant pot ?

Do I have to use Enchilada sauce?
I got a burn notice when I tried it, how much extra water do you suggest adding?
I made it but just used sliced pepperoni. I didn’t measure out the enchilada sauce and used pasta we had in a bag so used a tad bit more pasta as well. My kid loves it. I’m vegetarian so not for me.
Made this tonight for my husband and myself. Delicious and easy. Used your taco seasoning too. Next time, though, I think I’ll cut back on the red pepper flakes in your taco seasoning. My husband liked it that spicy, but I don’t like quite so much heat.
