Mini Cucumber Sandwich Lunchbox Idea

Cucumber sandwiches sound so elegant, don’t they? You can’t help picturing them as part of an elegant afternoon tea, sitting on dainty china plates alongside the steaming teacups and delicate little cakes.4 lunchboxes packed with Mini Cucumber Sandwiches, cookies and grapes

And yet, when you think about it, there’s really nothing that fancy or complicated about them. All you need to make them is white bread with the crusts cut off, butter or cream cheese, and thin slices of peeled cucumber. (English cucumbers are best, because they’re less watery and won’t make your bread too damp. But you can make do with the regular kind with a good thick layer of cream cheese to protect the bread.)

So really, there’s nothing to stop you from enjoying this delicacy for lunch any day of the week. Just whip up a batch of these tasty, elegant little sandwiches, tuck them in your EasyLunchBox, and add some grapes and mini cookies on the side. A hot cup of tea to go with it is optional, but certainly a nice idea.Mini cucumber sandwiches stacked on a cutting board

  1. Hi! Excited to try these! Quick question though, what is seasoning salt? Is this just like regular salt ? Thank you!!

    1. It’s like an all-purpose seasoning. But you can use whatever seasoning you like 🙂

  2. Lori Walker says:

I’ve been known to mix Ranch dressing powder or fresh dill from my garden into the cream cheese for cucumber sandwiches = extra yum!

    1. That sounds like a yummy idea!
