There’s no need to juggle plates and pans; people can just help themselves whenever they come down to breakfast. And when everyone’s eaten, there’s only one dish to wash.

Over the years, I’ve built up a whole stack of breakfast recipes. Most of them combine typical breakfast foods like eggs, potatoes, and bacon, but with a new twist each time. And my latest twist is – pimentos!

These tasty little pickled peppers give everything a Southwestern flair. I recently used them in a Pimento Cheese Dip, and I realized that some version of this would actually go great with the classic ham-eggs-and-potatoes combo.side picture of baked breakfast casserole

So I took one of my standard breakfast casserole ideas and started tinkering. A jar of pimentos, some chopped scallions, a container of sour cream, and a block of cream cheese to make it extra creamy and rich. Plus a bit of Worcestershire and just a wee bit of cayenne pepper to give it a touch of heat.

The result: a hearty, zesty breakfast casserole that will fill your guests’ bellies and bring a smile to their faces.

 How to Make Pimento Cheese Breakfast Casserole

  1. Heat oven to 350 degrees F.  Prepare a 9×13 baking dish with non-stick cooking spray. Set aside.
  2. In a mixing bowl, combine shredded cheese, sour cream, peppers, green onions, Worcestershire sauce and cayenne.

  3. Mix together until well combined. Pimento cheese mixture, mixed in a white bowl

Pimento Cheese Breakfast Casserole

This Pimento Cheese Breakfast Casserole is a hearty, zesty breakfast casserole that will fill your guests’ bellies and bring a smile to their faces.

Ingredients
 

  • 8 oz block cheddar cheese, shredded
  • 8 oz sour cream
  • 8 oz pimiento peppers- drained
  • ½ cup chopped green onions
  • 1 tsp Worcestershire sauce
  • ½ tsp cayenne pepper
  • 10 eggs
  • 20 oz frozen hash browns
  • 2 cups cooked and diced ham
  • Optional: Additional sour cream and green onion for garnish

Instructions

  • Heat oven to 350 degrees. Prepare a 9x13 baking dish with non-stick cooking spray.
  • Mix together shredded cheese, sour cream, peppers, green onions, Worcestershire sauce and cayenne.
  • In a separate bowl, lightly beat the eggs and pour into cheese mixture. Add ham.

  1. This looks so good. I don’t see the shredded cheddar cheese on the ingredient list, how much do u use? Could you use already prepared pimento cheese?
