The Best Crockpot Minestrone Soup

Now that fall is here, I have soup on the mind NON-STOP. It’s one of my family’s go to comfort foods. As you know, my favorite way to make soup is in the crockpot.
What can I say, I’m a set-it and forget-it kinda gal 🙂
What makes this The Best Crockpot Minestrone Soup? The flavor is spot-on and check out the obscene amount of veggies packed into this bad boy. I mean look at this bowl of goodness. Yum!

The Best Crockpot Minestrone Soup
- 1 can (14.5 oz) diced tomatoes
- 2 cups carrots, chopped
- 2 cups potatoes, chopped
- 1.5 cups celery, chopped
- 1 white onion, diced
- 3-4 cloves garlic, minced
- 1 Tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 bay leaves
- 4 cups vegetable stock ( I prefer low sodium broth)
- 2 cups water
- 3 cups V8 ( or tomato juice)
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 can (15 oz) cannellii beans, drained and rinsed
- 1½ cups zucchini, diced
- 1 cups tubular (ditalini) pasta
- 1 can (15 oz) green beans, drained
Directions:
- Place your diced tomatoes, carrots, potatoes, celery, white onion, garlic, Italian seasoning, salt, pepper, bay leaves into your crockpot.

- Add in vegetable stock, water, and V8. Cover and cook on LOW for 6-8 hours or 3-4 hours on HIGH.

- After cooking time is up, add in red kidney beans, cannelli beans, zucchini, green beans and pasta , and cook on high heat for an additional 10-15 minutes until pasta is tender.

Serve with your favorite crackers, salad or warm bread!

I want to try this crockpot minestrone however, I am leary of Tomato Juice since it is high in salt and I have to watch my salt intake. Any suggestions?? Maybe they make tomato Juice low sodium?
YES Deb! I am the same way. We try to watch our salt intake as well. Our grocery store sells a low sodium V8 and also a low sodium tomato juice. I hope you can also find some at your store 🙂
Thanks Corey — I’ll look in store. Which do u use V8 or Tomato Juice? I do find some of the low sodium chicken broths are not that low sodium – but Kitchen Basics makes a no salt one.
I personally prefer the V8. 🙂 But both will taste great!
Deb, Just a suggestion. Costco sells the low sodium cans of v8 juice 🙂

I was wondering if you cook on low for 6-8hrs or on high for 3-4hrs? Which way is best? And after cooking then adding the rest on high for 10-15 min, I was wondering if adding kale or spinach would be an ok idea. I also have a ninja slow cooker so I’m not sure how long to cook. Thanks.
I made the soup it came out very good. As Monica mentioned seasoning — my husband said the same thing! LOL I figured it was the bay leaf he had it in his bowl perhaps ?? I used V8 juice low sodium. I did not use potato instead used cut up zucchini that i added toward the end, and had pasta boiled already… I would make this soup again. It is good and healthy too!!
This was a hit! I got this off Pinterest. I followed the directions exactly and it turned out great. My husband was full after one bowl from all the big veggies- even though he always wants meat in his food! It’s a little thin on the broth side, I think I will add a little more juice and take a little water out. We loved it. Thank you!

I have frozen leftovers Jess 🙂 I would leave out the noodles if you are going to freeze and just add them as you eat it 🙂
