This will be your new favorite breakfast casserole!
Have you ever woke up craving both a sweet AND savory breakfast? “I want eggs and sausage. No wait, I want pancakes. Hold the phone…. I want a cheesy omelette. ”
I have this kind of morning ALL THE TIME! So here is my big, beautiful, sweet and savory answer. Breakfast Lasagna Casserole . I know, awesome right?!
Since there are the few steps of scrambling eggs, and cooking sausage before assembly, I suggest you save this recipe for a fun weekend breakfast. {unless you are one of those people who are up at the crack of dawn, excited to make breakfast}
Quick Note: Ingredients may vary depending on the size of your pancakes and the size of your baking pan. I used a 8X8 pan, which serves about 4 adults.
Can I use bacon instead of sausage?
Not a fan of breakfast sausage? Or have other breakfast meat on hand? Feel free to use any breakfast meats. Bacon, sausage patties, ham, or sausage crumbles. They will all work out great in this pancake casserole.
Can I make this vegetarian?
You betcha! You can leave out the meat all together, or use a meat alternative like Morning Star Farms. They have both bacon and breakfast sausage alternatives.
How did you get your pancakes so perfectly round?
To make this recipes even easier, I sometimes will use pre-made frozen pancakes. This takes out an extra step to make this breakfast casserole even more simple.
How to Make Breakfast Lasagna Casserole
Ingredients you will need:
medium sized pancakes
scrambled eggs
shredded cheddar cheese
fully cooked sausage links
- Preheat oven to 350 degrees. Prepare an 8 X 8 baking dish with cooking spray. Place 4 pancakes on the bottom of the dish.
- NOTE: Depending on the size of your pancakes, you may need to use more or less than 4. Just make sure each layer of pancakes are touching or overlapping some.
- Next place 1/2 of your scrambled eggs, and 1/2 cup of cheese on top of pancakes.
- Place another layer of 4 pancakes and top with chopped sausage and 1/2 cup of cheese.
- Finally layer the last 4 pancakes and top with remaining eggs and 1 cup of cheese.
- Bake at 350 degrees for 10-15 minutes, until cheese is melted.
