The Best Crockpot Beef Stew

Beef stew has to be one of my ultimate comfort foods, especially during the winter months. And what goes better with Sunday football than a big ole’ bowl of beef stew!
Now, this isn’t any old stew. This has been proclaimed as The Best Crockpot Beef Stew by my friends and family. So add this recipe to your menu next week and let the compliments roll in.

The Best Crockpot Beef StewÂ
- 2 pounds beef stew meat, (cut into bite-sized pieces)
- 1 tsp Salt
- 1 tsp pepper
- 1 medium onion, finely chopped
- 2 celery ribs, sliced
- 2-3 cloves of garlic, minced
- 6 oz can tomato paste
- 32 oz beef broth
- 2 Tablespoons Worcestershire sauce
- 2 cups baby carrots carrots
- 4-5 small red potatoes, cut into bite-sized pieces (about 3 cups)
- 1 tablespoon dried parsley
- 1 teaspoon oregano
- 1 cups frozen peas
- 1 cup frozen corn
- 1/4 cup flour
- 1/4 cup water
- Combine beef, celery, carrots, red onion, potatoes, salt, Â pepper, garlic, parsley, oregano, Worcestershire sauce, beef broth, and tomato paste in the crock pot. I used a 6 qt crockpot for this stew. Â Cook on LOW for 10 hours or on HIGH for 6-7 hours.
- About 30 minutes before serving, mix the flour and the water together in a small dish and pour into the crockpot. Mix until well combined. This will add a nice thickness to the stew. Next add in your frozen peas and corn. Continue cooking covered for 30 minutes.

I’m vegan, but my husband and last kid at home are carnivores, so I cook meat dishes for them several times a week, usually chicken or fish. I haven’t made a beef stew in years, though. Yesterday was cold and blustery, and I couldn’t think of any better smell to greet them than this when the walked in at the end of the day, so I threw it all together in the morning and left it to stew all day. I have to say, when I walked in first and smelled it, OMG!!!!! It was the closest I’ve ever come to being tempted by meat! The guys were thrilled with it, and they both had seconds, with some crusty French bread to soak up the liquid. They asked if I would make it once a month for the rest of the winter, and I will. Thanks for a great recipe!

Made this Today, no peas or corn.. But I did add a can of sliced mushrooms, and 1 can of Hunts diced tomatoes w/garlic, onion, and basil DRAINED… This was the best tasting Stew I ever Had.. There was a small tastey tang to it.. I couldn’t believe it also, as I didn’t add anything Spicey.. 5 stars in this Household!!

Just made this beef stew in the crockpot, and put it on the porch to cool off before going in the fridge. I’m sitting hear studying, and then hear scratching on the porch. I push aside the blinds and there’s a raccoon, trying to get at my stew! If that raccoon climbed all the way up three stories to get at this stew, it must be good. (And I tried it, it’s delicious!)

Made this stew awhile back and I am about to make it again. AWESOME! And yes, adding barley was a great idea (add during the last hour of cooking). The only other thing I did was I left out the carrots because we don’t care for them in things. Add a side of garlic bread and you have a great meal!
Made this a few nights ago as I was having a craving for something warm and hearty. It smelled lovely while cooking but upon tasting, it was very underseasoned. We added some Tony C.’s Creole Seasoning to taste and it was excellent. I’m not sure if I did something wrong to make it taste so underseasoned. If I did, I can’t figure out where I went wrong. Either way, this recipe is still highly recommended.
