The Best Crockpot Beef Stew

Beef stew has to be one of my ultimate comfort foods, especially during the winter months. And what goes better with Sunday football than a big ole’ bowl of beef stew!

Now, this isn’t any old stew. This has been proclaimed as The Best Crockpot Beef Stew by my friends and family. So add this recipe to your menu next week and let the compliments roll in.

The Best Crockpot Beef Stew 

  • 2 pounds beef stew meat, (cut into bite-sized pieces)
  • 1 tsp Salt
  • 1 tsp pepper
  • 1 medium onion, finely chopped
  • 2 celery ribs, sliced
  • 2-3 cloves of garlic, minced
  • 6 oz can tomato paste
  • 32 oz beef broth
  • 2 Tablespoons Worcestershire sauce
  • 2 cups baby carrots carrots
  • 4-5 small red potatoes, cut into bite-sized pieces (about 3 cups)
  • 1 tablespoon dried parsley
  • 1 teaspoon oregano
  • 1 cups frozen peas
  • 1 cup frozen corn
  • 1/4 cup flour
  • 1/4 cup water
  1. Combine beef, celery, carrots, red onion, potatoes, salt,  pepper, garlic, parsley, oregano, Worcestershire sauce, beef broth, and tomato paste in the crock pot. I used a 6 qt crockpot for this stew.  Cook on LOW for 10 hours or on HIGH for 6-7 hours.
  2. About 30 minutes before serving, mix the flour and the water together in a small dish and pour into the crockpot. Mix until well combined. This will add a nice thickness to the stew. Next add in your frozen peas and corn. Continue cooking covered for 30 minutes.

  1. I am making this right now, actually everything is in the crock pot. That’s part of the problem. I didn’t pay enough attention to the directions and I put the Frozen Peas and Corn in already instead of at the end. Oops, hope that mistake doesn’t mess up the meal. 🙁 But it already looks and smells amazing. My husband will be a happy camper when he gets home.

    Made this for my family (and me!) today. I agree this is THE BEST beef stew I’ve ever made! I also agree with some commenters that you could dial back on the spice a bit–maybe a little less pepper–but only because my 1-yr-old was pawing at it and wanted a taste. My 6-yr-old was all over it. And now my wife wants to marry me all over again.

    This recipe makes so much that we’re going to freeze a container of it and re-heat it some cold Winter week when we need something to cheer us from the cold and dark.

    Just found your web site and loved it so joined straight away. A ? please. Could I substitute a can of guinness for some of the stock. Have you ever done that? The recipe sounds lovely. Have just bought a new crock pot and looking for different recipes. What I love about this recipe is there is no need for browning any of the ingredients, which I have not done for a long time. I only hope potatoes will come out ok. I have had the same slow cooker for many many years but potatoes,carrots well any root veg seem to come out quite hard so got to the stage where I cooked them separately. So Hopefully my new crock pot will change that. Have you ever had this problem.
