The Best Crockpot Beef Stew

Beef stew has to be one of my ultimate comfort foods, especially during the winter months. And what goes better with Sunday football than a big ole’ bowl of beef stew!

Now, this isn’t any old stew. This has been proclaimed as The Best Crockpot Beef Stew by my friends and family. So add this recipe to your menu next week and let the compliments roll in.

The Best Crockpot Beef Stew 

  • 2 pounds beef stew meat, (cut into bite-sized pieces)
  • 1 tsp Salt
  • 1 tsp pepper
  • 1 medium onion, finely chopped
  • 2 celery ribs, sliced
  • 2-3 cloves of garlic, minced
  • 6 oz can tomato paste
  • 32 oz beef broth
  • 2 Tablespoons Worcestershire sauce
  • 2 cups baby carrots carrots
  • 4-5 small red potatoes, cut into bite-sized pieces (about 3 cups)
  • 1 tablespoon dried parsley
  • 1 teaspoon oregano
  • 1 cups frozen peas
  • 1 cup frozen corn
  • 1/4 cup flour
  • 1/4 cup water
  1. Combine beef, celery, carrots, red onion, potatoes, salt,  pepper, garlic, parsley, oregano, Worcestershire sauce, beef broth, and tomato paste in the crock pot. I used a 6 qt crockpot for this stew.  Cook on LOW for 10 hours or on HIGH for 6-7 hours.
  2. About 30 minutes before serving, mix the flour and the water together in a small dish and pour into the crockpot. Mix until well combined. This will add a nice thickness to the stew. Next add in your frozen peas and corn. Continue cooking covered for 30 minutes.

    I recently started working full time at home and have been searching for gluten friendly meals that are easy and yet taste great. This was amazing and full of flavour! Thank you so much for the recipe. Even my husband who isn’t a fan of one pot meals raved about it. My boys asked if I could make this 100 more times. I reduced the beef broth to 3 cups so I didn’t add the flour at the end. I always add a few more veggies than a recipe calls for and for our family of five there were leftovers to put in the freezer for another day. I served it with a spinach salad and fresh bread.

    Yooooooo! Corey (and Darryl, Big D & Little D!), Thank you for this recipe! I usually make my beef stew in a smaller pot for my family of three, but, as we were having guests for Sunday dinner I had to figure a way to make enough for seven. It’s now chilly and gloomy outside and the election chaos made me desperate to bring happy, comforting smiles around the table (and fireplace). I pulled out my new BIG crockpot and I hurriedly scoured the web for help, finding boring, off-putting, watery, overdoingit stews that made me go back to my own (kind of boring) stew. And then i found your site! The tomato paste, corn and peas (instead of the green beans I usually add) made for a fabulously hearty and sweet change! During my taste test while it stewed, I added a couple dashes of crushed red pepper for an extra kick (we all like spicy). I used the stew’s own juices for the flour mixture (instead of water) but adding this step was a “new”, but forevermore process for me. Let me tell YOU something, my friend…. This was the best beef stew I have ever had, crock pot or not! My family and friends oooo’d, aaahh’d and mmmmm’d (hahaha, seriously!) all evening from the start of the first spoon clink to the end of the seconds, and well into the second glass of red!! Thank you for helping me create happy smiles and comforted tummies in my home, and during this unsure time in American’s lives.

    Fantastic stew: thanks for the recipe. We had some left over smoked beef brisket so gave this a try. My wife also added 1/3 cup port wine to add to the depth of flavor. We used gluten free four as my wife tries to stay gluten free. Worked fine. The result: best beef stew I ever had.

  4. Did you brown the meat before or just throw it all in there? I’ve seen a bunch of recipie s doing either or, just curious what you did!

    Just made this as my first ever slow cooker meal in my first ever slow cooker and hot dang, was it good! And after punching the ingredients in to my fitness pal it came out at 453 calories per serving! Nice! I have a 3.5 qt cooker so I just halved the recipe and it worked great. Thanks so much! Love your blog and will be trying out more recipes for sure!
